  3. I mentioned this in the "I'm cooking for a lot of people" thread, but figured it may justify it's own home. We hosted a pachanga at our house this weekend for my 40th. Ended up with about 90 people. Probably 60-30 between adults and kids. I did four briskets. We grilled a dozen chickens. We also roasted two cabritos. They were the star of the show. I'm a gringo, but I had help from an Argentine buddy. It turned out damn good. Will do it again for sure. Here's what we did: First, I got a goat. Two actually. Picked them up Friday from Johnny G's off Manchaca. These guys were a little over 17 lb each. They were still kinda frozen but fit nicely in a 120 qt cooler. Stacked ice on em for the day. Saturday morning, I hung em up in the garage and let them thaw a bit. We built a little half wall with some stone I had laying around and rounded up some red oak from my back hillside. Got the fire going mid morning. The weather was glorious. The beer was cold. I built two parrillas. I thought my design was great. It actually sucked. I made the legs collapsable with bolts and pins for easier storage. The pins sheared when we tried to level the parrillas with a sledgehammer. Hence the vice clamps. Oops. Also, I already know that I suck at welding, so let the fabrication criticism commence. But, hobby welding's like golf and sex. Even if you're no good at it, it's still pretty damn fun. We started with a bunch of spatchcocked chickens to figure out the heat. My aggy Argentine parrillero buddy. He's awesome. For aggy. One of the nicest guys you'll ever meet. He's also a damn fine cook. His in-laws own a catering business and he's good and efficient and knows what he's doing. Time to prep the cabrito. Salt. Pepper. Some olive oil. On to the parrillas. I learned a lot here. Coals under the hams. Coals under the shoulders. Not much under the ribs. Murphy the dog approves. We were thinking about two hours. Ended up being closer to three. That meant we pulled them off after dark, so I didn't get any good money shots prior to cutting them up. Also, I got pretty drunk and forgot to take more pictures of the finished product. I think my wife took a bunch, but I'm too lazy to go ask. Lots of folks kind of gathered around while we were butchering them and ate pieces as they came off. The mini-tomahawks with rib meat and backstrap / tenderloin was awesome. Kidneys were pretty good too. But, the shoulders and hams were legit. Put some homemade chimichurri sauce on them over a fresh corn tortilla, a bit of diced onion and some cilantro. Cabrito heaven. Brisket did not suck either. We had way too many leftovers and sent everyone home with meat for days. I got the meat sweats. Ate leftovers all day Sunday too. The end.

  8. The stupid thing was putting Iran in a position where it had no choice but to respond. In an adversarial situation, if you don't want your adversary to do something rash and destructive, you always leave your adversary a way to save face. Taking out Iran's #2 leader, and bragging about it to high heaven, when he was quite popular internally....didn't leave Iran much choice. Not punching back was not an option. Putting Iran in a position where they had no viable option but to attack US interests directly was a stupid, stupid move. That's why a crapload of us aren't upset that Solemani is dead -- we're upset that we fucking did it in such a brazen way that guaranteed a counter-strike.

  12. They've already been far more patient in the last year than we would ever be. We're not the only people in the world with pride, courage, and wherewithal. I would be in the streets of Iran cheering were I an Iranian. We're not the fucking good guys. We're just another country pursuing its interests in the oil rich Middle East. Nobody cares about our WWII merit badge. We are what our record says we are. We've left pieces of innocent citizens all over the place from Kuwait to Afghanistan. Are our interests being served by what we have done? My guess is the only benefit of our violent policies in that part of the world have mainly served to give the morons here a good feeling about themselves as they watch the explosions and high five the death of an endless stream of fanatic enemy leaders. But what are we really gaining? Enjoy your adolescent thrill of feeling tough; some of us would like a little more for the blood and money.

  19. That's all you've got? How about beating every team he was supposed to beat and blowing out Texas to boot? I'd like to see a coach at Texas take care of every game he's supposed to win at some point. That would be nice. Temple won 10 games once before Rhule. He won 10 games there, twice. He beat ranked teams for the first time since the late 90's. He kicked Penn State in the nuts while coaching at Temple, blew them out, and made Temple a national CFB talking point for the first time since the Big East attempted to kick them out of the conference for consistent poor performance in football. He took a Baylor program in shambles with less than 60 players on scholarship, where the recruits were being freed from LOI constraints due to the problems, and ended up going 10-3 in his 3rd season, playing in a second bowl in a row. The fucking Baylor fans are crushed today that this guy is gone. What does that tell you? Texas fans here are openly gleeful about his exit. This wasn't smoke and mirrors, dude. Like I wrote previously, taking some sort of position where what you've seen from Rhule doesn't impress you, doesn't make you smarter than everybody else. It simply shows the rest of us that your future takes regarding the game of football are to be easily ignored.

  20. If I remember correctly, he was an apologist for Joe Paterno and the entire Penn State complex during the Sandusky scandal. I'm sure it was a rock and a hard place thing for a lot of those guys, honestly. You've got personal devotions and loyalties and then you've got institutionalized child rape and cover-up that come out of nowhere and you're asked immediately what you believe and why you believe it. In hindsight, the first few months of that shit must have been brutal for everyone, but I'm sorry, if you're going to defend Paterno, you either have to walk it back later or you're in cahoots. I don't know, maybe he wasn't one of those guys, but I certainly thought he was. I'll say this, I thought he would bust badly at Baylor. He didn't. He turned out to be a legitimately terrific coach who developed players within his program. I hope he finds success in the NFL and never returns to any school that Texas is playing. Now, what random coach does Baylor hire out of nowhere who then suddenly works miracles for that shithole? I'd like to see them go another run like they did with Chuck Reedy/Dave Roberts/Kevin Steele/Guy Morriss. Give me some more of that sweet action.

  31. Today was a big milestone for Shelby as she completed her 6th and final chemo infusion. It’s been almost 3 months since she first got sick and she has done really well since the surgery. The vet oncologist had diagnosed her with stage 3 hemangiosarcoma for which the prognosis was much worse than we originally expected. They didn’t expect her to make it this far and said most dogs don’t so they aren’t sure what to expect moving forward. However, not only is she still alive, they say the cancer is now undetectable in her blood and on her abdominal ultrasound today. Essentially she is kicking ass and our vet support has been incredible to get to this point. They called her their miracle dog and said they plan to write a case report about her for the vet literature. Here she is walking the trail this evening, happy as can be and enjoying life.

  34. As a matter of political theory, they can't not retaliate. What delineates the nation-state in the post-Westphalian world is that it has a monopoly on the use of violence within its borders. That's agreed by its citizenry. And in exchange for giving that monopoly, the state has an obligation to protect its citizens from violence. If a state can't protect its citizens from violence, then it fails in its basic purpose. And when the state can't protect its own senior officials, it sends a message to the entire polity that the state has failed in its basic purpose. Aside from the popularity of Suleimani within Iran, the Iranian regime had to retaliate to show its own people that it will take action to protect them. If it didn't do that, then it would imperil its own existence.

The only real potential starter left out there for NSD2 is Collins, and things are continuing to trend toward landing him. Are we really up in arms because we want to pack the class with late risers? Come on... If Herman can bring in some great position coaches to maximize what he gets from his very good to exceptional coordinator hires, he gets a pass from me. If he forces more shitty or unknown coaches on the program, I'll have a different opinion.

  39. Not sure where to put this but on the Cochlear Implant that was asked about above. She will never really be able to fully understand speech over the phone since she has been deaf her entire life but she can now recognize a bunch of words over the phone, on TV and in background conversation. The funny thing is the normal bullshit that we hear every day. Birds (1), fridge running, ice dropping in the fridge (2), water left running (3), water boiling (4) (1) Her calling me at work: When you are in the house, can you hear birds chirping outside Me: Yes Her: Well, they are annoying. We need better insulation (2) Her: Something is wrong with the fridge. It makes this horrible sound like parts are falling out of it Me: They are. It's the ice Her: That's annoying (3) Since the implants, she has yet to leave the water running while washing stuff in the bathroom sink. Our old sinks didn't have overflow holes so she has flooded the house twice because of this. Between the implants and remodeling the bathrooms, thankfully that hasn't happened. (4) The number of ruined water kettles/pots due to being left on while boiling water had decreased dramatically since the implants. Downside: It is no longer safe to say shit behind her back when she pisses me the fuck off. In the past, I just had to be aware of mirror placement, but now she can actually hear shit.
