Dallas | Fried Chicken

Been jonesing for some fry chicken bird the last few weeks and gave Palmer's Hot Chicken a shot for lunch today. I have to say it's quite tasty yardbird. I ordered the Little White "Novice" with the waffle and a side of fries and cole slaw. Then I added a couple of a la carte strips and went "Nashville" on those. I like spicy food but I've been skittish on Nashville Hot Chicken since I ordered a Nashville Hot Chicken sandwich at brunch at Wheelhouse last year and it annihilated by taste buds. Everything tasted like I was eating (or drinking) pennies after eating half the sandwich. It was wild.
At any rate, the chicken -- both on the bone and in strip form -- slammed and went hard. Eyes were definitely watering from the spice but you can also get the sweetness from a little sugar that breaks through. I thought it was great. The sides were pretty meh but I had to figure the fries wouldn't travel well. We live by Love Field and it's a haul to get over to Palmer's during lunch. I ordered around 12:40 for 1:10 pickup and didn't get there until 1:25 or so. I probably left my house about 12:55.
I ordered to have curbside but when I pulled up, not sure there's a system in place for it. Looked at my email receipt and it said to go into the patio area and then go to the bar window. Things were dying down pretty good by then so it wasn't too crowded. BTW, I think this is the old Bailey's 1st & 10 spot, yes?

Just got Palmers to go. Easy peasey order and pay over the phone, grabbed it from the take out counter about thirty minutes later and I was on my way. Got the leg quarter and two sides. Chicken was finominle and held up insanely well for being packaged and driven 15 minutes away. Skin was still crispy AF when I got home. The spiciness was perfect, kind of hits you right away but goes away quicker than you'd expect so you can continue stuffing your gluttonous hole unphazed. Collards were good but I'm black so they'll never touch grandmama n dems recipe. Pimento grits were awesome. 10/10 will gorge again.

Personal thoughts:

Slow bone bbq has some great fried chicken. Don’t exactly expect much from a bbq spot but it hits.

bbbeop is also really good but a little inconsistent.

streets fine chicken is great. As is mikes fried chicken.

I honestly think luckys fried chicken is pretty bad. No crunch. Inconsistent on spice level. Spice mix has a good flavor, but the chicken itself is bad imo.

can’t wait for Hattie b’s.

really want to try the new Gus fried chicken.

I used to love it but Bubba's makes me feel absolutely gross after eating it. Love the rolls, though.

Celebration's fried chicken is fantastic. I've never gotten the fried chicken at Pecan Lodge but I hear it's great.

I have been eating Bubba's CFS, as a ritual treat, for nearly 40 years.  I don't think I have ever eaten fried chicken there.

By "ritual treat,"  I mean not like weekly or monthly, but sort of a "hmmm what would be a nice food treat today/tonight."  Thus, the only time I go to Bubbas, and it's been 100% drive thru for probably 15 years, is for CFS.  Never had any desire to eat anything else.

The only change I can detect in the food is that they have gone from one giant steak to two small ones.

I don't think I've ever had the CFS at Bubba's. That's usually what I'd get at Babe's out in Roanoke, though.

The best part about Palmer’s:

I had a leftover piece and I ate it about midnight straight out of the fridge and it might have been better than when I ate it fresh and hot earlier that day. That was some damn good, spicy leftover chicken.

that’s not unique to palmer’s.  cold fried chicken has always been delicious.

I laughed reading this. I’ve been going to bubba’s for thirty years. the mexican ladies working there know and love me. it’s one of my favorite restaurants. hand to god, I don’t think I even knew they had chicken fried steak.

David Chang’s ghost kitchen Fuku seems like it is totally fuku’d up. Tried ordering opening day last week, no go. Tried on day two and waited nearly 2 hours and then the order was canceled.

Sarah Blaskovich (DMN food writer) got her food but it was cold and poorly done.

These celebrity-sponsored outpost ghost kitchens are just a money grab. Not gonna contribute.

Waffle fries barely travel from CFA to the house. Can’t imagine how this would work.

Hit Lucky’s across from SMU for lunch. Went with the sandwich combo “Feelin’ Lucky” spice level. Feel like I could dial up to the medium level pretty easily.

The chicken strips tasted great but were all little chewy in places. It was after any kind of lunch rush and they had the food on my table just a minute or two after I sat down. Wondered how long they’d been out of the fryer. Anyway, everything about the sandwich is good — flavor, “slaw” on it, the cheese, chicken and pickles. The bun is really good too. Shake fries were tasty. Free soft serve if you order a meal — Baker’s Ribs gimmick. I didn’t partake but great enticement for kids if you’ve got them with you.

I’ll be back. If the strips are chewy next time, then we might have a problem. Get that worked out and this is a fantastic sandwich.

Mdmost and I had Palmer’s Hot Chicken today. Got the three piece tenders (novice heat which I thought was just right amount of spice without being a chore when you go too hot). Really tasty tenders. Also subbed in the waffle which was great and had a hint of brown sugar in it which made it really good and reminds me of Roscoes out in L.A. (a high compliment). Tip: if you get those with the waffle you don’t really need to worry about the other sides since the chicken and waffle are enough to make you full. Will definitely be going back there.

Ended up going to Palmer’s again. Got the chicken tenders (Novice heat) and waffles once again (wisened up and used my “sides” to get the waffle). Wife got Nashville tenders plus the corn and queso fries. All delicious. Also with the 2 sides that it really way too much food and we ended up with leftovers for dinner. Plan on going back soon to try the catfish and shrimp. Wife plans on trying the Napalm level tenders.  Nashville heat wasn't all that much hotter than Novice, BTW.

Anybody tried Roots Southern Table in Farmers Branch yet? This fried chicken looks incredible. It's cooked in duck fat.

Esquire Names Tiffany Derry’s Roots One of the Best New Restaurants America

LAUREN DREWES DANIELS NOVEMBER 23, 2021 4:00AM

Roots' duck-fat fried chicken has earned national attention. Alison McLean

Last week Esquire magazine released its annual list of best new restaurants in America and we couldn’t agree more. Chef Tiffany Derry’s Roots Southern Table in Farmers Branch, an ode to  Southern cuisine and hospitality, snagged a top 20 spot, coming in at No. 19.

Roots, which opened in late June, was listed on New York Times list as a top 50 restaurant in the nation earlier this year.

From the pages of Esquire, “Roots is plangent proof that Black southern cooking from the Creole coast, incorporating as it does elements of French, Spanish, African, and Caribbean traditions, alchemizing as it does migrations forced and otherwise, is both the country’s greatest culinary patrimony and its path ahead.”

If you haven’t made reservations yet, you should soon. The showstopper here is the fried chicken, which is fried in duck fat just as it is at Derry's fast-casual chicken spot, Roots Chicken Shack in Legacy Hall in Plano. The chicken is brined and marinated, then fried to a deep dark brown. The family-style platter is served with a plate of biscuits, a small bottle of hot sauce and candied rhubarb slices.

Alison McLean

Chef Derry made an appearance on season seven of the cooking show Top Chef, where she won "fan favorite" after finishing fifth. She also competed on Top Chef: All-Star chefs in season eight and finished fourth. She helmed the kitchen at Private | Social in Uptown for about a year after that. Roots has long been in the works for Derry, something she spent years creating.

And as good as the fried chicken is here, you’d be remiss not to indulge in her symphony of seasonal vegetables. And it's been said Roots serves the best gumbo in the city; Derry even served it at the White House to then-President Barack Obama.

Plus, it's simply a lovely space. From Reinhart’s review earlier this year:

“At Roots Southern Table, her [Derry’s] triumphant new Farmers Branch restaurant, everyone is full of joy. The customers are happy, the staff is enthusiastic, the mood is like a family reunion and the food tastes like a celebration. At Roots, it’s very easy to remember just how much we loved a great night out before the pandemic.”

Esquire’s list also included Hestia in Austin (no. 4); March and Degust in Houston (No. 6 and 17 respectively). In 2018 Petra and the Beast was named to this list, a well-deserved and enduring spot. Look at our female-driven kitchens.

Is Hattie B's ever going to open?

it's open!

Hattie B’s Hot Chicken, a long-awaited, fan-followed fried chicken restaurant from Nashville, opened at 11 a.m. Feb. 23, 2022 in Deep Ellum. A few brave souls stood outside in the 25-degree weather waiting for the doors to open, a signal that this food is still worth standing in line for, even on a frigid Texas morning.

So this is in that place that used to have a bunch of dominatrix costumes in the window across from Allgood?

The Startlegram readers poll awarded top fried chicken to Babes. No problem. Sometimes these things award KFC or similar. The surprise runner up was Jesus Family Restaurant which before was Jesus BBQ. It was a lonely diner of 50 years until SoMa became a hipster regen area. Covid nearly killed them and the old man hasn’t relit the pit. Hence the name change.

Their fried chicken is fantastic. They are really a Mex-Tex-Mex joint and have unique family recipes. We usually get a plate of enchiladas and tacos each and a platter of chicken for the table and take most of it home along with her fried pies.

If you haven’t had it I suggest you try it before they go away. The daughter runs the kitchen and she’s 69, and the old man has to be close to 90. The value of the real estate has to be beyond their dreams (I hope they own it!) As the area is smokin hot. I hope they take care of the family and cash out while they can.

Wife and I went to Brick & Bones down in Deep Ellum for brunch. I had the chicken and waffles and she had the tenders and mac n cheese. All were quite tasty. Bonus points for the atmosphere as I love a dive bar kind of aesthetic. The pics don’t really do it justice but, coming in from the bright heat outside to the very dark cool vibes of this place was a bonus. Kind of reminds me of Casino El Camino in Austin but slightly nicer.
