Kite Surfing

I learned in Tulum. You can combine a chill beach vacation with your intro to kite surfing.  Unless you have prior sail/board experience, it will likely take 6ish hours to learn and get the hang of it enough to start enjoying it.  If you grab one of those small training kites and get the feel for that before you actually hit the water, it will make your experience much easier.

This,  get a training kite and it'll make a world of difference.
