  2. The Kroger and HEB near me both had them in abundance. Didn’t do a ton of trimming in these. One cooking method I saw after that I think would be good is to braise them for an hour or two after smoking to break down the collagen even further. It wasn’t an issue while it was still warm, but after it cooled off and resettled it firmed back up a lot.

  4. I am looking for some recs to help fill out a weekend. My wife and I will be there for our anniversary, so mostly looking for some fun activities and some restaurants. Particularly, looking for your best Mexican/taco spot for lunch and some spots for dinner. Based on what everyone says I imagine we will end up at the pearl area at some point but walkable from river walk is preferable. what is the taco spot that gets posted here frequently that appears to have the most beautiful tacos I’ve ever seen? Someone knows what I’m talking about.

  8. My wife is out of town so I decided to play around and smoke some beef cheeks, which I’d never done before. Holy hell did this turn out well, and in only 5 hours. It’s definitely fatty but it’s so much easier than dealing with a brisket.
  9. FWIW, I am usually a scramble it all together person but I may have had a bit of a hangover this morning.

  13. After a couple of years, I finally convinced my out of state coworkers to get bbq with me for dinner during our annual dept conference. It’s hard to get them too far from downtown once everyone’s in, etc. I took them to Pinkertons and pretty much from the minute we walked in I could tell these guys were in awe. Pinkerton’s was on point, so they did me a solid and made me look good to the out of towners.

  19. My oldest is going through a picky eating phase, to the point that the only chicken nuggets he will eat are Chick-fil-A. What can I say, the kid has good taste. These Kirkland “chicken chunks” are about as close as you could possibly get to chickfila, from size, shape, quality, and flavor after popping in the air fryer for 10 min.   20. I think I created a monster. Bought the HEB boudin jalapeño poppers. Decided I needed to add some pepper jack cheese. If you can’t tell they were comically stuffed. But that cheese really made it.
  21. My wife has had enough of washing bbq towels that leave the washing machine nasty for a day or two so she got me this for Christmas. Got a pork but sitting in there right now. A little superfluous but honestly it’s been pretty convenient not having to wrap it and then put it in the cooler.
