The recipe is obviously coming from some credible sources, but I really question cooking white meat turkey to 160. That's dry and overcooked for white meat. Now if that's for full bird, then I agree; dark meat needs 160. If you're doing only a breast, go to 140.
I've done this and it was excellent. Cooked the breasts to 160*.

surprised there hasn't been any mention of the new zach bryan album. i am greatly enjoying it this weekend. early on, i think this one is the stand out:
Spent a lot of my weekend listening to it and the new Turnpike. I’m a fan of Jake’s Piano, El Dorado, I Remember Everything, Tradesman, and Oklahoma Son.

Just start from the beginning and go from there.
If you can dig up some of the Sunday Valley shit, that really exemplifies his punk rock back ground meshed with country.
Sometimes Wine is quite possibly my favorite Sturgill song of all time.

“Backstrap from the morning kill/I always kept the best for you”That is the best line from the song. First couple of times through, I find it "meh." Just doesn't sound like a Turnpike song to me.

Rudy & Paco is also open at lunch during the week.

I enjoy it. Prefer the rainforest pyramid, but both are fun.
Black pearl? Plenty of better places depending on what you are looking for.
Oh and air museum moved up north to clear lake
try Vargas, Rudy and pacos, shucks, or sugar and rye.
I did not care for Sugar & Rye. Haven’t been to Shucks yet.

I think Whiskey Myers is a lot more dynamic of a band, and better songwriters to boot, but as the Dude would say "that's just your opinion, man".
ZB definitely skipped out on that whole Texas dancehall scene. I kinda get the impression that a lot of musicians don't really care for it, even though for many it provides a great consistent income stream. I always thought the line in Cody Jinks' "Hippies & Cowboys" that goes "I ain't never been a part of any musical scene, and I just talking Nashville if you know what I mean" was a shot at the Texas circuit.
I never thought that about Jinks. I know several people who saw him play in smaller venues before he blew up. But it is also pretty clear to me that he beats to his own drummer. I like his older stuff. Past couple of albums haven’t done much for me.

Anyone have experience with Parker Boot Co. in Houston?

Got tickets to the December 28 show at Billy Bob's. Pretty pumped.

Still working on this, I think I'm on batch 4 for the year. I work at a biotech that produces some products for food and beverage and wound up talking to the head scientist in the baking lab, who is from Texas and suggested that I use milk instead of water. She also told me to just use the mixer, to ditch the tortilla press altogether, and to let the dough rest for a couple of hours. I've been working off of the link Brisket posted above - https://patijinich.com/flour-tortillas/, using crisco shortening. I had been using more fat than the recipe called for, but I think with the addition of the milkfat it was too much last time and the dough as difficult to use. I also still tried to use the press last time, but ended up having to also roll them out and everything was gooey and it was pain in the ass. The tortillas were crazy pliable though. I used right on the nose 2/3 cup this time, and I did ditch the press altogether (and have gotten better at making dough balls and rolling out circles), made sure I had enough flour on the working surface, and I formed the dough into individual balls this time before letting them rest covered. Much better, much easier. And the tortillas are finally the right thickness - super thin as they go into the pan, and they came out not paper thin but not this thick almost pita thing. I want to try and improve the flavor and am going to try doing this with butter next time, although I may see if I can get some lard from the butcher shop down the street.
Use bacon fat. It is glorious.

I just couldn't get up for CoJo, and I wanted to watch the Texas game so I skipped Brad Paisley. I have to volunteer at church this evening, so I'm out on Luke Bryan.
My rodeo is over. I'll have to eat 40 bucks of Corral Club tickets, but oh well.
I really hope the HLSR/HPD reconsider closing segments of Kirby before shows. It caused countless traffic nightmares. Some people would rather stay home than deal with that nonsense.
Aren’t tickets good the next year?

Agree about the difficulties associated with two locations. Truth rotates employees between Houston and Brenham to try and make sure quality is consistent between locations.

170* was as low as I could get it, even with a reprogram. I think a water pan on top rack would give me a bit more protection as well as humidityThat is low as mine will go. I’ve never tried to reprogram. Also never tested to see where it actually is on temp.

I fucked it up by forgetting the water pan in the oven. Mostly dry as fuck after overnight oven hold, but salvageable. Will have to try againInteresting. I've done an overnight hold on several occasions and never included a water pan. What temp was your oven set at?

Why not keep it on your patio?

The Land Cruiser is allegedly coming back but on the Prado platform as a 4 cylinder turbo hybrid. Still speculation though.
It is coming back. Have not heard anything about the platform or power. From what I heard it will be more along the lines of the original Land Cruiser and not a luxury vehicle.

I’ve held a “finished” brisket in the oven for 15 hours with no issue.

Probably from Uncle Nate. Just like the story that Manziel's family had so much money he didn't need to take any under the table.
