  6. That Sunday gravy looks awesome, though I prefer it with spaghetti. I have several buddies in New Jersey who have sent me their nonna’s recipes. The differences are quite subtle but significant. Mainly due to where they came from in Italy, or from which neighborhood in nyc, or family preferences. all use USA red gold tomatoes. The differences are in use of sugar, how much basil, amount of garlic and onions, and assortments of meats. Always sausage, most whole links some peeled and cooked as loose meat. Spare ribs. Then the pork varies between shoulder, neck, and cheeks. One has trotters for the gelatin. I am fascinated with these my/nj Italian foodways and how they created a cuisine the world sees as Italian food from these starving peasants. Like various types of Mexican food

  9. Thanks for pointing that out. Actually it’s 1 tbsp. I usually put in 4 large cloves of fresh garlic minimum, sometimes more. Theres also garlic in the ranch dressing powder. Like I said, adjust your seasonings how you like.

  14. it’s really easy. I might have posted it elsewhere. There was a place in Memphis we’d eat at as a kid that had this killer blue cheese dressing. Maybe I’m weird but I loved blue cheese from a very young age and the bottled stuff is crap. My dad got the recipe and it’s been tweaked thru the years. This is a base recipe that I tweak a bit each time based on the pungency of the cheese, the type buttermilk you use, and how sharp your lemons are. Typically I use the crumbled Bel Gioioso from Sam’s as it’s good for being cheap and it’s easy. I’ve made it with fancy funky types like Roquefort and Stilton and I prefer those in a salad with a vinaigrette. I have a market near me that sells Vollmans real full fat buttermilk and it makes a big difference in taste and texture as it’s really thick. This is very rich, and I want it with heavy garlic where it burns. So like it less and it’s a dressing to tweak with. I recommend folks start with less of the seasonings and add more of what they like. 8oz your favorite bleu cheese, 6oz Daisy sour cream 6oz Dukes Mayo 4oz Buttermilk, full fat if possible 2-4 Garlic cloves, microplaned or crushed 3 tbsp. Ranch dressing mix 1 tsp Granulated or powdered garlic 2 tbsp Lemon juice (start with 1, add to taste) Dash or two Lea & Perkins Worchestershire 1 tbsp Italian parsley, finely chopped 1 tsp fresh black pepper, more to taste Squirt. sriracha in the spirit of the thread keep it in a rinsed out Route 44 cup.
  15. Had a leftover burger patty from cooking out a couple days ago. That’s my homemade blue cheese dressing that will knock your dick in the dirt. Onion and a mater. those beans are what my granddaughters refer to as Pops’ Candy Beans. They are mighty sweet but also are loaded with jalapeños.
  16. In DFW, Fuel City still has incredible tacos. A few years back TM named it the best taco in Texas. the best restaurant in a gas station was Chef Point in Haltom City or Watauga. Fine dining chef couldn’t get a loan for a restaurant, could for a fillin station. Started selling fine dining that you ate at a table next to motor oil, and the drink selection was like a QT. Was an early Diners Drive in and Dives feature. a shell station reopened with a taqueria which was stupid as my Arlington neighborhood has three of the best around: 2 Compas, Tic Taco, and Gilberto’s. It closed quickly. has reopened as Rodeo Hibachi. It looks great and getting great reviews. Gonna try it and will report.
  17. I was raised on these as we lived as misplaced Texans in places without real TexMex. Usually a mix between the combo and the enchilada dinners. They didn’t have the salsa bowl in the middle until latter days just before the shift to plastic. the big difference to later versions: that aluminum tray. Microwave ovens didn’t exist. Eating a TV dinner required planning: a hour in the oven. But the result was far better: the beans had that crust you get from a salamander, the rice fluffy not gloopy, the gravy rich with little pools of grease.

  19. Are you the guy eating a Philly cheesesteak at IHoP? Practically all of them outside of Philly North NJ are shit, made with frozen Sysco chopped beef planks on shitty rolls. Or they ate at Geno’s or Pats in Philly which is like eating at Joe T Garcias. in Philly I usually go to John’s Roast Pork store. His cheesesteak is also one of the best I’ve had. the best I’ve had is at Taliercio’s Ultimate Gourmet in Red Bank, NJ. Made with their house roasted prime rib, imported aged provolone, garlic semolina bread. It was $30 back then, gotta be more now. They are all over Facebook. Best sandwich store I’ve ever been to.
  20. Talk about an overrated dish, instead of restaurant, is the Philly cheesesteak. Most places it’s a horrible thing to eat, even in Philly. In Philly the thing to get is a pork with broccolini sandwich, with long hots.
  21. I don’t think Pittman got that ultimatum. He used up all the goodwill he earned with his turnaround using Bielema and Chad Morris recruits and superseniors. The team has been lazy, inept, out of shape, and stupid; basically a reflection of the coach. The loss at Memphis to yet another G5 school was the nail; they waited a week to fire him on the bye. if he got that ultimatum it was last season and he stuck with this crew. he had a weird clause that if his overall record went below .500 he would get 50% of his remaining contract. If over he would get 75%. Basically $7 mil vs $10 mil. Sexton is spinning that sam magnanimously agreed to a 62.5% number to help the program. What they fail to mention is the offset clause was removed meaning he doesn’t have to go get a job to get his money.

There’s a shitton of money in the state that will step up if they believe they will see results. with the SEC going to 9 games there will be additional slots in the CFP, until the SEC figures a new direction. It’s a state with one program and no pro teams which is an advantage. There is money to raise that has not been tapped because the AD and HC were inept and indifferent to NIL. The athletic dept is successful in every sport but football; their minor sports are dominant crews. The right guy can do well there but they will likely fuck it up.
