hopefully this helps someone - this is how i think about tuning/adjusting my pour overs. a lot of this i kinda stole from espresso. i think of it as 3 components to the flavor = acidity/sweetness/chocolate. you want to get the right balance. too much acidity becomes tart, too much sweetness becomes dull, too much chocolate becomes bitter. i always brew light roasts, and depending on how i brew, i get different proportions of acidity/sweetness/chocolate. so for the same beans, i could get different proportions of flavor components depending on grind+brewer+process. 6/6/2 (6/10 acidity; 6/10 sweetness; 2/10 chocolate) is like a carmel apple 1/5/5 is like chocolate covered caramel 5/3/6 is like dark chocolate covered cherry 1/9/4 is dull with a funky coffee aftertaste 8/2/1 is too tangy 1/1/9 is burnt/bitter/dry i have no idea if this is scientifically correct, but i feel like acidity/tartness comes from surface area + not being masked by sweetness or chocolate. so if i want more acidity, i grind finer and/or make sure i'm not getting too much sweetness/chocolate. if it's too tart, i either grind coarser or try to add more sweetness or chocolate. (if i decide to grind finer, i have to consider that i am likely naturally adding more soak time and more overall extraction, so I may need to switch devices + vice versa). sweetness comes from the soak time, esp in the middle of the brew. so if i want more sweetness, i slow down the process. (either more pours, different equipment, or stopping the flow with a switch and letting the grinds soak for 30/60 seconds). water flows faster if there is more of it in the brewing device, so if can't flip a switch and stop the water flow, by breaking up pours or pouring slowly, you get more soak time. frankly, with light roasts, i am mostly trying to reduce sweetness, but with darker roasts, you may want to add it. chocolate/bitterness comes from overall extraction, especially at the end. so you can reduce bitterness by using cooler water for the final pour (just dump a little cold water in your kettle before the last pour or 2), using less water for the same amount of beans, or by just stopping the extraction early by taking the brewer away before all the water runs through. You can almost think of it like grilling onions/garlic. you control pan, time in pan, coarseness of chop/surface area, and heat. you chop too fine over high heat for a long time, you get bitter/burnt. too short time in pan = too sharp, too long on low heat = overly sweet (perhaps). turning down the heat at the end makes it way easier to get the cook you want, and that's how i think of adding cold water to the pot for the final pour. anyway, i know this is super dorky, but hope it helps someone diagnose and fix shitty coffee. i know i use a certain type of grinder and coffee, so you may need to adjust/experiment a bit. also, i don't think this all through (like i've typed out above) when i'm making coffee; it's intuitive. just tried to type it out for others. it's like how you would grill onions. onions and garlic are easier because you can see them cook. imagine cooking onions/garlic with a lid on and you could only check at the end by tasting. that's what brewing is like. oh, finally, 100% easiest way for me to diagnose is the aftertaste. imo, a good cup should be smooth, with no funky/dry aftertaste. sorry if not clear, typed during zoom meeting.

this is all excellent advice, imo. granada is rad. and sevilla is a great place to visit. personally, i wouldn't spend a lot of time at spanish beaches, only because i think there are better beaches if i want a beach vacation. re madrid vs barcelona. personally, i don't like the city of barcelona much. the parts that aren't overly touristy are not worth visiting, imo. and, personally, i really like madrid - the vibe and people of madrid remind me of california, except the city is both clean and cosmopolitan. maybe if you combined like art/cultural opps of sf, vibe/cleanliness of pasadena, and weather and buildings of la. idk. but madrid is very chill, and the art is fantastic. one of those cities i'd be happy to visit just to chill/vibe. and use as central point to visit other locations in spain. BUT, the food (overall) is way better in and around barcelona, and i hate real madrid. lol. so i always find myself in barcelona. gonna be there next week for barca/dortmund. my two fav restaurants in barcelona aren't going to be open while i'm there, so i booked Cocina Hermanos Torres and lasarte. never tried either. (disfrutar kinda mid, imo). if anyone has a good rec for a paella joint, or other great local restaurant, pls lmk.

if you make espresso - some other worthwhile tools, imo: espresso distribution tool espresso screen espresso tamper idk how well they work, but makes me feel like i'm getting more consistency, which helps me "tune" the recipe - no need to spend much on each one, imo.

something i bought (grinder, i don't remember) came with a little spray bottle for free. seems kinda stupid, but just a couple spritzes of water on the beans before you dump them in the grinder makes a huge difference. one of my grinders is staticky, the other isn't. i just spray every time. now i get zero static, zero coffee bean dust around the grinders. huge hack. A+ would recommend.

imo, the production quality was top notch, and the crowd was as into the game as you could be, given: a) how much game control Texas exercised, b) how few Clemson fans showed up, and c) the fact that Clemson and Texas aren't exactly rivals. I thought it was a rad experience, and I'm glad I made it to town for the first playoff game at DKR, but the experience was definitely a notch or two below red river, for me. and I don't mean to complain at all. I'm glad I went. the experience will only get better as they expand the number of home games (hopefully) and fix seeding (hopefully). hook em. -

According to BCFToys, Clemson's offense (adjusted for comp) is between UGA's and A&M's. So, a decent shot Texas can hold them below 15. Texas has the best defense (statistically) Clemson has faced. Clemson put up 3 on UGA and 14 on South Carolina, the two next best defenses they faced. So, matchups aside, it's hard to see Clemson putting up more than 15-20, assuming we force them to drive the field. Knock on wood. Clemson's defense (adjusted) is between just above Florida's, below Michigan, UGA, OU. Texas scored 49, 34, 31, 16, 15 in those games. The Texas offense ranks in the middle of UGA, Louisville, and SMU, who scored 34, 33, 31 on Clemson. Obviously there's a lot of variance on Texas' offensive output. I think the big issue in these games is - can Texas run the ball and protect the ball? If so, then on paper, the team has much better shot at getting to 30 (at least against every team except UGA, Notre Dame and Ohio State). -

almost forgot. my kids really liked the ziplining at that age, and me and my 12 yo daughter went into the hindu monastery and it was really awesome.

my personal opinion - i wouldn't go looking for good dining experiences in kauai. haven't been there in a few years, but feel like i tried all the high rated places and none of it was memorable, most of it a let down. most memorable food experience is grabbing groceries at living foods in poipu. stuff like a box of cereal was comically expensive. i def think of kauai as a pizza/shave ice/acai bowl destination with 10/12 year olds. ymmv speaking of kids keeping up with the hikes, took my kids here when they were about 12/13 and it's chill at first but gets super dicey. we turned back after a bit. they were fine to keep going, but i didn't trust them to not slip. views are insane tho. my kids at ~11/12 really liked sleeping giant, Kuilau Ridge, teh botanical gardens/chocolate tasting tour, and kipu ranch adventures. jack harter heli tour was a bit much for my 11 yo, fine for my 12 yo. just fyi.

anyway, just my thoughts - each of us have some insight into the dynamics of a sliver of the electorate. but it's hard to say which slice is going to be the deciding factor in 2024. if we knew today which demographic was going to be key in 2024 - and if we could parse the EV data by demographic, we could prolly draw some better conclusions. for me, if i had to guess, in my county, trump's numbers will be lower than they were in 2020 due to drop in enthusiasm among college educated whites increase in enthusiasm among women aging out of former elderly trump supporters and each of these trends are only important on the margins. if i could parse the EV data for my county by these demographics, i could prolly test my guess a bit. but i have no idea what's going on in the important swing counties. might come down to enthusiasm among evangelicals - which i have no insight into. reminds me of 2016. Jake Sullivan, who grew up in Minn., then a young upstart in Hillary's close circle, was begging Hillary to campaign in the upper midwest. He was def telling friends that she was gonna lose the election because the polling was wrong in teh upper midwest. everyone else in her inner circle thought he was wrong.
