Not sure on all the places you’d consider or are interested in but I believe the highest rated restaurant is Joel Robuchon at MGM Grand. As you are probably familiar, it’s expensive but generally worth it for those who are into that sort of a dining experience. The issue would be getting a reservation but try asking a casino host at Aria they might be able to help.

Outside of that one, could look at other nice places but not in that same category. I can vouch for Amalfi at Caesar’s. The space is vibrant and the seafood/Italian menu is fantastic. Would definitely fit into the fun night out category with great food but not into the super high end experience.

If you wanted more of the fun experience and I’m not sure on the food these days, could look into The Foundation Room at the top of Mandalay Bay. It’s been years since I’ve been so I can’t say on the food quality but the view hasn’t changed and it’s pretty cool.

If you wanted to mix it up and grab an Uber, check out Vintner Grill in Summerlin. It’s pretty much the nice locals option for folks who live out that way and it’s a solid spot.

We’ve had many who dined at the high end E and loved it. I haven’t been. I’ve done China Poblano once or twice and it’s a fun casual option if the menu suits your taste.

We did E a few years ago and it was one of the great dining experiences of my life.   Jaleo is stop on almost every trip, totally fun and delicious (just do the tasting menu and ask for a small paella).   Bazzar Meat was also excellent; it offered the molecular stuff similar to what you get at e, but a la carte and a steakhouse menu too.  It was in what was called SLS at the time, which was a real downer of a place*

*have not been to Vegas post pandemic shut downs, so I don't know how these places are doing.

Not sure if its panty dropper material, but the Italian American Club is one of my favorite places to eat in Vegas.  Off the strip, but depending on the night and time that you go will require reservations.

Just scheduled a trip in June the weekend after Father's Day. I'm pretty, pretty excited.

Only panty dropper I don’t see on your list would be Prime at Bellagio. They have three tables that are with windows directly next to the fountains. Food was excellent last time I went. Score one of those tables and thank me latter

Bazaar Meats is the best steakhouse in Vegas

 

Joel Robuchon is good but not worth the price (its the most expensive meal ive ever had). Ive been to maybe 10-15 three-star michelin restaurants and JR is just meh for $600

 

E is much better and a fraction of the price. Guy savoy also better for the price. Hell, Atelier is better imo. Jaleo and China Poblano are both very good. Pro tip - get the Salt Air Margaritas (best cocktail in vegas) at the to-go window at China Poblano

edit: also drooling about F1 on the strip

I just got home from a trip. It’s busy again. Even some conferences going.

I’m calling in some chips to get any and all F1 hookups.

Let us know how your trip goes. I did Lotus, Piero’s, and Sen of Japan. Needed to take a friend to my favorite off Strip spots.

Made a few sports bets. Popped over to Ellis Island one night and it was rockin’.

Vegas is busy for a Monday night. I had to wait awhile to get a spot at a craps table. Also saw a $50 min table. No thanks. I’m going to need the Dow to have about 20 more days like yesterday.   
 

Went to Joe’s Seafood last night. It was very good and probably worth a recommendation. One thing I always like about eating in Vegas is the professionalism of the wait staff at a lot of the establishments. Our waiter was on point.

The grilled cheese dumplings might be my all time favorite appetizer I’ve had. Their max and cheese is amazing too.
