Started out buying and curing pork bellies from Costco.  Bought simple pink salts online.  7 days in the fridge and you're good to go.  There are so many cures you can buy and cure recipes.  Tried sweet but didn't like.  I prefer a thick cut with heavy pepper.  1/2 in to 3/4 in cut.  Start with half the the pork belly.  Cube the other half and make pork burnt ends!

I did a three day cure and fucked it up the first time. I didn’t rinse it well enough so it was way too salty. That being said, it makes a great 12 hour brine for smoked bone in pork chops. Someone with way more cred than I please start a “making bacon” thread.

let's hear more about this.  what's the best way you've found?

Start out searching “sweeter than sweet cure” . Drunk now , ain’t showing links. Get some, it’s really easy. I haven’t tried it but it’s also supposed to really tame wild boar fwiw.

That reminds me of a story. I had an acquaintance in the health club business and they were replacing their older treadmills with new ones. He asked if I wanted one of them basically for free. I had no interest but my wife assured me that she would use it "all the time". And she had the perfect place for it -- upstairs in the converted attic / spare room that nobody ever went into.

So they deliver it to my house and it's just enormous and weighs a fucking ton. I mean, it's a full size heavy duty gym quality treadmill. The thing is built like a tank and is as heavy as one. In order to get it up the narrow ass staircase, we had to disassemble it and then it still took 4 grown men to haul it up and get it where she wanted it. And then she never used it once. Not one fucking time.

Nah , don’t feel so bad . You got yours for almost nothing. We paid almost three grand and she walked on it twice “ I don’t like the basement.” Yup , she wants to get rid of the guest bedroom now. FML

  4. Recs on fishing guides? I have a buddy that honeymooned there 18 years ago and only fished with locals. Paid $140 a day and fished and snorkeled 8 times . Can this still be done? It’s not about money, it’s about getting fried in the sun. I cant do an eight hour charter without shade.
