I didn't grease the pan, but the tortillas went from greasy plate to hot greasy comal to the pan where i rolled them. No con carne on the sauce -these were green enchiladas. Probably it would have been good to have some warm sauce to spoon over the enchiladas on the plate, and I might go 5 per row rather than 6 per row next time - I had to spill a bit of sauce in order to properly cover the enchiladas on either end. Admittedly not the most awesome looking enchiladas or picture - this was a "quick" weeknight meal while I was rocking a baby with my foot and the enchiladas sat there for a bit before i snagged a pic

Amazon has a quarter sheet pan and a quarter sheet sized cake pan by Nordic Ware paired.Β  Cake pan has higher sides and would appear to work well if using a red con carne gravy over the enchiladas.Β  Just ordered.

I haven’t had a soda since 2009. I drink exclusively water, and on occasion Gatorade zero, protein drinks, and alcohol.Β

Given your brain dead opinions, alcohol must lead the pack.

I just returned from 3 days in Houston. Stayed downtown at the corner of Main and Rusk at the AC, which is cheap and cheerful and next to the Flying Saucer.Β  I took the Red Line up to White Oak Music Hall twice. Yep, there are definitely some homeless people on the train (and all over downtown), but I've been on MARTA in Atlanta and other public transport before. Not a big deal.Β  One guy targeted me when i got on the train, but I just ignored him and he hopped off at the next stop. No cops and no one checking tickets either ride.

Atlanta resident here.Β  Just firmly say no, and usually it works out.

Slightly off the enchilada topic, but in line with the bottom of the barrel TexMex discussion:Β  I used to work a few miles away from a Pancho's.Β  I would get their 4 beef tacos for $1 to-go special at least once a week (except I'd get 2 orders, so 8 tacos).

I don't know what I ate, but I think one of those tacos whinnied at me.

Man, I miss Pancho's buffet for lunch.Β  Loved their chile rellenos and those sour cream enchiladas.Β  Raise the flag!
