  1. Anyone do the Wine Spectator New York Wine Experience last weekend?

    For the question about storing upright, never do it, regardless of humidity. All good, modern wine cellars control humidity around 80/90%. The cork needs not only the moisture from the air, but also the colloidal solids from the juice to make an effective seal.

    sure there was an insane amount of holding giving mond time, and a lot of the credit for those passes need to go to the receivers.  But they do look much better coached than aggy past and most importantly it looks like he has total buy-in from that team.  

    Im not jealous because I would never trade places with aggy, regardless of any hypothetical success they might have.  I'm just disappointed that they somehow managed to do a coaching hire correctly (except the contract length) while we shit on the ceiling and are waiting for it to fall.  

    The one thing I’ve seen so far, spring game and first two games included, is they’ve taken a couple of scrub tight ends and made them a significant part of the game plan, which just further supports what you’re saying. They’ve somehow found a way to make the most of mediocre players when it matters. And we can’t find Collin Johnson because of “schemes”. I’m almost tapped out.

    We gave Mensa rope last year.  He didn't impress, but it was his first year, blah blah blah.  And what did we get for that?  Losing, again, to an even worse Maryland team dealing with all sorts of shit.  And Mensa seems to not give a fuck.  Then we barely beat Tulsa, only because their kicker is the worst guy at the position in college football.  And we're going to be lucky to win six games this year.

    So no, I don't think we're on a hair-trigger or out of line.  We have the most money, some of the best facilities, and the top talent in one of the most talent rich regions of the country.  Yet we're in Year 2 of Mensa's tenure and we're struggling with fucking Tulsa and Maryland is beyond us. 

    At least CS “fired” Watson after his shitshow first game of year two. Herman better get his shit on track fast.

    Man, I just watched the game for the first time. Mond did well, but a lot of those throws were less than 50/50, and he was the recipient of outstanding receiver play on the ball, plus what appeared to be a lot of luck. I’m not arguing that he wasn’t effective, just saying it didn’t look like he was super prepared and picking off targets because he knew where he needed to go. A lot looked like a wing and a prayer. Granted, he made some good plays, and he didn’t Ehlinger in the 4th and give the game away, which at this point, I’d love to have on our team. It hurts to admit he’s probably only going to get better.

    Back in April of last year young went on an uov to Texas, met with Naivar and Herman (briefly) and was on top of the world going to the place he knew he wanted to be. At that point young had a handful of offers and was really feeling himself. 

    On that visit Young wasn't offered. He continues to rack up offers at CB from blue bloods. He goes to Texas junior day and shows out, but still isn't offered. 

    He goes to aggy, they lay it on thick, red carpet Yada Yada and immediately offer. He gets a call that night from Naivar, says he wants young swing by if he can make it. On that visit Naivar tells him what we all know, he's a safety and Texas wants him there, and offers. The way he tells young sounds like he's offering just to stick it to aggy, or keep him from going elsewhere. 

     

    Now kind you all this is going on and coaches around the country have started kissing Youngs ass telling him everything he wants to hear. Naivar stays in touch but maintains that he's a safety, then the communication seems to slow to a crawl afterwards. Naivar has moved to other oos targets. 

    Fast forward to Youngs top six release via Twitter. It doesn't include the good guys. Naivar starts blowing him up telling him corner is in his future, spend an ov  there so on. This goes on for weeks, but the Texas shine is gone, and the ass kissers have the lead. 

     

    As far as I know up until a couple weeks ago Naivar was still on Young but at that point it was over.

    I guess you can call me a traditionalist. To me, it’s part of enjoying good wine. You’ll never see anyone putting that aerator into a bottle of 89 Haut Brion. 

    With that said, I don’t think it’s important to decant every wine. HenryJames is posting a lot of young Pinots that probably don’t need it. You also won’t need to decant much of your local, young HEB wines. But if you’re going to spend the money on a good bottle, spend the time to decant it. The cost of the decanter is peanuts compared to the cost of the wines.

    Also, you might have misinterpreted what I said about giving  the wine some air.  I’m a firm believer that the wine will evolve over time as air is introduced.  There’s no reason to drink white burgundy out of an oaked chardonnay glass otherwise.  All I’m saying is the lab studies cannot discern a difference in the composition of the wine over time, other than some of the volitiles do evaporate.

    You should decant for a couple of reasons. The main reason is to keep the sediment in the bottle and not pour it into the glass. You decant by looking through the bottle while pouring it into the decanter and you stop pouring when you see sediment start making its way to the neck. I absolutely can’t stand when you go to a “nice” restaurant and they just upend the bottle into the decanter. The other reason is to let some of the volatiles come off (like strong alcohol for example) which may open up the bouquet to some of the other notes that would otherwise be dominated. However, there is no scientific evidence that this really changes anything about the composition of the wine. So tldr; do it because you don’t want to drink sediment.

    ND has a lot to offer.  It's a quality school and he and his parents are education minded which is a good thing.  Still, I think a business degree from UT is very comparable with a ND degree probably carrying a little more weight if he's wanting to go work on Wall St (in Texas a UT degree is just as good or better).  But that's a win/win decision for him.  Can't fault him.

    Man I work day to day with a ND PhD Chem Eng. Also with a bunch of aggys, unfortunately. I’ll never take a back seat to any of them, or all of them combined. Anyone who wants to argue merits of the ND vs UT education is baseless.

    Basically, this wine is grapes from two parcels in Pommard and one in Burgundy, thus its declassification.  I have been looking for A-F Gros wines, and this was the first time I had a chance to have any.  It was absolutely great.  

     

    What was the vintage?

  12. 1990 R. D.  Great vintage for champagne. 

    I have a csb story about 1990 vintage champagne. I was in NYC walking to a show and ran across this little wine shop and decided to walk in and peruse. Found a 1990 Salon for $300 and I was like seriously? The little Indian owner said of course and was happy to sell it. Took it to Jungsik and enjoyed with some fantastic Uni. Beautiful wine. Anyway, carry on.
