For Sunday, I would check in advance when the restaurant at the resort closes. If your flight is delayed, i.e. you get in late evening, you might need to find something in Georgetown.
You can buy booze there - there's a liquor store chain called Jacques Scott. There's one that's super close (across from The Reef, the Wyndham property next to Morritt's) and also a small Foster's grocery store. Premium pricing at the liquor store, so it depends on if you are willing to spend a ridiculous amount per bottle.

I'm looking forward to this. We've been to a number of places in the Caribbean and this has always been on our list.
BTW, how easy is it to get used to driving on the wrong side of the road? I lived in England as a kid but, didn't do the driving.
Resort is pretty good. We always stay in the Grand or the Londoner, so right on the beach. The staff is pretty solid and there are several folks working there that we've known for years. Used to hang with some of the sales folks, even at their homes for dinners/parties, but all have moved on to other Morritt's resorts or out of the industry entirely. No, we did not ever hang with Armie Hammer (or encountered him for that matter) when he briefly sold timeshares there after he went nuts on that woman from Dallas.
Driving on the left is pretty easy. Easier if you rent a right-hand drive car, believe it or not (at least for me). Just take it easy at the roundabouts and try not to feel too pressured to blast through the busier ones. Also, watch out for the yardbirds and crabs - they're pretty much everywhere.
We always fly in on a Saturday and stop at one of the bigger Foster's to load up on groceries and a liquor store for any booze that we didn't buy at duty free on the way in. We make breakfast and lunch in the condo and then eat out or get takeout for dinner. Most places are closed on Sunday, including grocery stores, so unless you want to eat every meal at the resort on Sunday, get groceries on Saturday. The dock bar at the resort is also cool for evening meals if you don't want to eat in the dining room - the food all comes from the same kitchen.
You can also charter a boat for fishing and Captain Herman will cook your catch. When we've done that, we've always enjoyed it.
The pool with the swim up bar is meh, but to each their own. They do games and shit and it's loud (PA system and microphone) and so fuck all that. There always seems to be a kid squeezing out a Baby Ruth in the pool every trip, shutting it down for the day.
It will be fucking windy when you are there.

Depends on how many people are visiting and how many of those people lock down palapas.
As far as other places, other than 7 Mile Beach with all of the other resorts, i.e. touristy shit, I would say Rum Point.

Any tips on things we need to do? We're not going diving, so that's out. I'm an old fat fuck that likes to sit on the beach and drink fruity rum drinks. But, I don't mind getting out and about since we're there for 2 weeks.
Sitting on the beach, reading a book, etc. is what we do half the time. Go claim a palapa early - one of us gets up at 6-6:30 to hang a bag at a palapa to secure it.
Go snorkeling - the resort is sort of meh for snorkeling but it's right there. There are lots of cool places to snorkel on the island - Eden Rock is my favorite, but we try to avoid it on days when there are multiple cruise ships in. Cemetery Beach and Macabuca are other favorites (there's a dive shop next to the Cracked Conch / Macabuca Tiki Bar restaurant with a built in set of stairs into the water for divers/snorkelers) It's a great dive spot but the snorkeling there is cool too. There's a shelf right there that drops off 300-400 feet or so for the divers but the water is gorgeous for snorkeling too - go snorkel, then pop out for a few drinks at the bar, then go back in.

Oddly enough, there are also a couple of restaurants in the medical center that are supposed to be really good - one is an Indian place that is supposed to be the best Indian food on the island. We meant to go there in August, but ended up doing something else.
Over the Edge has gone downhill, so we haven't been there in a couple of years.
