Just the other day I was wondering how much "free" services (pickup/delivery) were helping inflate prices. Take groceries: I guess there is some reduction in in-store employee headcount if more people are shopping "remotely", but I'm pretty sure net employment is up, and we're paying for it in the sticker prices of food, etc. I have no idea how that effect might compare to supply chain issues, etc.

I'd keep them separate just because of the radically different heat levels. Step your way into the amount of chipotle and (especially) cayenne and take notes on the final blend. After that, I see no reason not to make your own personal pepper blend, but those heat levels can vary from plant to plant and even pepper to pepper.
I have never seen any rationale for staging the addition of peppers throughout the cook (like cumin as you alluded).

I saw some frozen pizza shootout the other day that determined Kirkland was the best one out there. I bought them a decade or more ago because kids + CostCo cheap, but I don't recall them being transcendent or anything. Have they changed?

I saw him there a few years before that. A buddy of mine makes one of Charlie Sexton's guitar pedals and Charlie was reuniting with Joe for a few shows. We got the invitation, "oh hell yes", and watched from the stage left shadows as Joe & Charlie practically ignited the place. Joe couldn't have been a nicer guy, too.
