    Wrapped in a cooler would actually be “holding”, I believe, effectively continuing the cooking process as long as enough heat is contained. Versus resting, wherein the meat is more quickly cooling and the juices reincorporate back into the meat. It is my understanding that the latter is necessary whereas the former is optional. Some mistakenly think holding = resting and end up slicing meat that has not cooled and lose the juice on the cutting board as a result.

     

    Rest, then put in cooler if you need to hold.

  3. Four Points HEB:

     Went late afternoon Saturday, and it looked like what I imagine a grocery store in Stalingrad looked like in 1973.  Went early yesterday, and they had a decent amount of produce and meat, but no cheese, no eggs, and the frozen food sections were still pretty bare.  Wife stopped in today and it was not fully stocked, but pretty well-stocked (including eggs and cheese).  They are getting back.

     The Dunn and La Jota are 2011.  Worst vintage in years because of wet, cold weather.  As someone mentioned, a lot of remaining 2011 is getting dumped.  There are actually some decent wines from that year, but even some of those tend to fall off quickly after opening.  2011 is the Forrest Gump vintage — it’s like a box of chocolates

    There is a small independent liquor store near me that I buy liquor from on occasion because I like the guy and I like the convenience, even though theprices are higher.  He has a decent amount of 2011 cabs, and I know he is getting it because the higher end outlets don’t want it, but I just keep my mouth shut.

    Agree on the thermal carafe.  Have used one with the last few coffeemakers we've had.

    Greg Brown takes 9 shots a game and 4.1 of them are threes. that is so frustratingly stupid. how many close games have we lost this year? or under Shaka period? there are dozens of examples of small shit like this that all adds up to Texas never being near as good as they should be under Shaka. 

    Looking at several mock drafts (including ESPN), Brown has dropped out of the lottery picks.

Tonight—  Kamen Lava Block.  Tried the regular Kamen about a year ago, and ran across this today.  VIneyard is in Sonoma, but high on the Mayacamas backing up to Napa Valley.  Mark Herold is the winemaker.   Fun fact I learned today:  the owner (Kamen) is a screenwriter who did teh Karate Kid moves, the Taken and Trasnporter movies, the Fifth Element, and a lot of other stuff.

    This is a really nice, balanced wine:

    He was a good lawyer, and is a good Judge, at least on the patent/civil side.  No insight on criminal.
