    On the argument of true Tex-Mex probably one of the definitive authorities on the subject is The TexMex Cookbook by Robb Walsh which traces the recipes back to the original San Antonio chili queens. But agree with others that recipes have evolved for the better.

    The cheese enchiladas recipe in that book uses cheddar 🧀  And onions 🧅

  2. Mark Long is teaming up with Bunin/Murray to produce on OG version of the Challenge. It looks like it will be somewhat like All Stars, shorter and probably local. Who would you want to see? It’d be fun to see the likes of the Miz, Timmy, Jodi, Coral, Evelyn, Kenny and Evan again.

    I said something similar a few weeks back. His knee problems weren’t a secret so I don’t think they missed it. The doctors must have made the decision to not to take care of it in the offseason. Obviously they made the wrong one.

    Try subbing Colby for Cheddar. It has a higher moister content and melts better. Sometimes cheddar becomes a globby gut bomb. If you insist on cheddar, use a younger, milder cheese to help alleviate this issue.
