Stout and Fuller's ESB clone were well received at Thanksgiving. I think the 8.5% stout helped cover my cooking flaws, another unexpected benefit.
Still experimenting with carbonation balance, but it's been nice to be able to cheat with Perlick creamer faucets.
Am I right to think that head retention and lacing will improve when I graduate to all-grain? Because so far neither are as good as your mom's. -

I've had my first stout on at 11 like the charts say, but in sampling it before its intended Thanksgiving purpose, I'm going up to 13 or so to see how that works. But I'm trying to cover for a lot of flaws I don't even understand yet. -

We took our boys (10 and 13) on a whim while driving home last summer, and it certainly made an impression.
The aquarium is good, but honestly I thought the TX aquarium in Corpus was better. I would rather have spent that time at the WW2 museum, which is one of the best I've ever seen. We could probably have done two full days there. If we'd planned ahead better, we would definitely have done Preservation Hall.
We had an absolute blast embarrassing the shit out of them one evening on Bourbon street. They learned what vomit mixed with fecal/urine slurry and MD 20/20 smells like, and my wife made our older one get his picture taken in front of all the titty bars, then had them pose with a guy in leather hot pants, a crop top, and a cowboy hat.
At breakfast at Cafe Du Monde the next morning, the 10yo pointed wide-eyed at the newspaper headline that said 3 people were shot on that corner later that night.
It was pretty awesome.

Ignoramus question amnesty, plz:
Y'all inspired me to get a fermentation chamber setup (chest freezer with Ranco thermostat, going to tape the probe to the side of the carboy and cover with bubble wrap for some insulation). Brewing an ESB tomorrow with wyeast London ale, with a fermentation temp range of 60-72*.
Where would you set the thermostat? Try to account for heat from fermentation at 55 or so, or just go at 60 since that should stay in range regardless? Or should I quit overthinking this since anything is better than my previous unfrozen caveman efforts without temperature control? -

My 11yo is asking for a telescope for Christmas, and this stuff is outside of my experience. Do the Celestron that Thujone linked or the Meade from Armybrat seem like reasonable places to start?
Thujone, does the control app you were talking about require the wifi module? Is there anything like that for the Meade which would make the initial learning curve less steep?
Also, it looks like the Meade uses GPS to align automatically, correct? I suppose that would be one less step than the Celestron, but is it that big a deal?
Anyone ever try the Celestron smartphone adapter, and would that work for either of these? It would be fun for him to snap some basic pictures without the complexity of full-on astrophotography.
Just trying to figure out if one of these is better than the other for a kid starting out, and which will reward his curiosity rather than crush it. Or if there are any other recommendations, I'd love to hear them.
