  1. Headed to Bartlett, TX from Dallas on Saturday.  Any recommendations around there for BBQ?  Taylor is 17 miles south but we will be hauling a livestock trailer and not sure they are gonna want to go down there and back after loading.  Anything else special in the area?  We very well might end up at LM, but just looking at othe options.  I know Miller in Belton and Guess/Helberg in Waco are on the way back.   Thoughts?

I can't keep track of which Black's is Black's (or maybe they all are), but I don't think Austin (Barton Springs) is as good as Lockhart.  And maybe they aren't both Terry.  I don't know.

"Terry Blacks" as far as i know is in Austin, Dallas and soon Waco.  They are members of the family but are estranged from the original Blacks BBQ.

I haven't had a bad meal at Terry Blacks yet. Ate in Austin once and several times in Dallas.

  3. Tough to see any place close but that was a tough location.  If you never been the front of the building faced the road and all the parking was in the rear.  I'm not sure about Ft. Worth location but this one had a bar (Arlington doesn't) and someone said that Frisco/Little Elm made them be open 7 days a week.  Is that a thing?  You can force a business to be open a certain number of days?  This location also didn't cut food in front of you and for some reason that's the kind of joint I like.  I prefer my food being sliced, etc.   Only been out to the Arlington location once and everything I tried was 10/10.

My trip to Little Elm wasn't as impressive.  I just think it was a bad spot.   There's a Hula Hut right down the road and it doesn't seem to be super busy when I have driven by.

  4. I do one every year, and seems every year I do something a little different.  Anyone got some tips and tricks.  I usually do about 7 lbs or so.

*Also brother doesn't like it smoked so gotta cook it in the oven.  I'd like to smoke one sometime.

I haven't been in a long while, but I heard from a friend that Miller's in Belton got rid of all their wood smokers and replaced them with electric bullshit. I need to go take a look and confirm for sure, but the source is pretty legit. Their tourist trap bullshit started turning me off long ago, and their stupid layout and ordering/sitting nonsense lottery system. Fuck them in the goatass. It's a shame they ruined a once-great little spot in the old building that once had the best ribs of all time, before threw them away when moving to the new touristy place. The guy that was doing most off the cooking at the old place got kicked to the curb when they moved, and it seem like the talent and bbq authenticity mostly went with him.

Meanwhile, Schoepf's has actually upped their brisket game substantially. I still don't go there often because the prices are sky high for a not top-50 caliber place. But they deserve another look for folks who haven't been there in a couple of years and wrote them off.

Got some Q brought it from Bare Bones in Gatesville recently. Brisket was dry as fuck. Definitely smokey, but not in a great way, a bit harsh. Shitty super-sweet sauce. Sausage had decent flavor, but overcooked.

When I was at Millers (been this summer sometime) they were switching over to the M&M pits which are basically oylers.  So it's still wood with an electric assist.

I really have nothing to add to this topic other than I had a frito chili pie at Billy's on Burnet today and the cook put the fritos on top of the chili and cheese, which at first pissed me off. But then I ate it and it was all good.

That's like putting the gravy under the chicken fried steak.

Good friend is in charge of the Troudadour festivals. Hope you had a great time (I hate country music with a passion, but good eats at least).

No, Chase treated me awful constantly reminding me about that OU loss to Texas the weekend before.  Brutal.

Will check it out when shit settles down. Very good BBQ at the Crest Cadillac dealership up here so why not HEB?

Man I've heard the commercials and some talk on the car dealership BBQ joint. So it's legit huh?

That HEB was nuts yesterday from all reports.  When they open the one in North Plano hopefully that will help settle down the folks a little bit. BBQ Snob said it's getting a BBQ joint in it also.

  9. How about Terry Blacks opening a new location in Lockhart?  I knew I had read that the owners of Terry Blacks and the original Blacks weren't social anymore but to think you open up a new location in Lockhart is pretty ballsy.

  10. That HEB plate; the sausage looks like it was warmed up in the oven. Hopefully it tasted smoky.  HEB about to open up here in Frisco/Allen area gonna be happy be able to go in there and source some meats.
