  1. Wife brought me home leftovers from Smoky Rose yesterday. Gotta say it was much better than what I recall when I went there when they first opened (which wasn’t bad but also not worth the final bill). Brisket and pork ribs were pretty tasty, 2 different sausages were good. The pulled pork was just kinda bland but maybe it didn’t travel. Recall on the old thread that they had revamped their smokers. Based on this one sample I’d say that was a good move.

  2. For the record I do like Yellow Rose but I’ve also found it to be inconsistent from batch to batch in the past few years. It certainly seems like they have upped production in the last couple of years (so much so that I routinely find fresh packs of it for sale at my local Costco here in Dallas).

  3. I thought it was great. Yes there are a few plot holes here and there but I believe that can be said about almost all movies these days. Runs a very lean and tense 90 minutes. Watching a move that quiet in long stretches is also a very unique theatrical experience.

  4. Other than special circumstances like Texas-OU every year and traveling out to the USC game last season (or whatever is similarly a unique/attractive OOC game), for me personally watching a game down in Austin (I’m here in Dallas) means potentially missing out on watching other good CFB games immediately before and after (& even during commercials). I love my Fall Saturday afternoons and nights when I can gorge on CFB. I typically smoke some BBQ, have the games on a TV in my backyard and switch over to watching them on a projector in our backyard when it gets dark. The experience of going to a game in person (other than maybe once a season down and in part to also have an excuse to be in Austin for the weekend) doesn’t outweigh what I’m missing in my normal Fall Saturday night routine. Hopefully CDC will help turn around the fan experience at DKR to make it more attractive to attend in person.

Check out the Virtual Weber Bullet recipe for Beef Chuck Short RIbs.  I essentially always do a hybrid of the Franklin recipe (for the rub/prep) and the WVB recipe (to determine amount of charcoal, water, etc for a WSM 18.5...as Franklin uses an offset in his recipes).  Franklin rub (half salt/half pepper). Follow the WVB for charcoal and no water and, roughly 6 hours later, they were done (4.74 lb rib pre-trimming of fat).  I will say that the WVB recipe calls for it to be pulled when the meat is probing (on average throughout) around 200 but as I recall Champ on here recommending to wait longer to render more,  I think I actually pulled these more in the 207-210 range.They were quite tasty.

  6. For those that have/have used both sizes, doesn’t the 22 require more fuel? If so and one is smoking smaller amounts at a time (like I am), it seems like a 22 would be kind of overkill and a little wasteful from a charcoal perspective.

  7. I've been trying to decide whethet to get a WSW, or a pellet grill/smoker. I already have a nice gas grill, so leaning toward the WSM. Any thoughts on this? Also what is the best size on the WSM? Is it worth the extra $100 for the 22"?


    How many people are you serving at a time or how many different meats do you want to smoke at a time? I have the 18.5 WSM and have almost never used the second, lower grill. On the top grill alone I can get a good size brisket or 3 racks of pork ribs (or 2 pork ribs plus a turkey) or 2 beef ribs, etc so it’s been big enough for me if I’m entertaining cooking for up to 6 or so adults (w/ the kiddos maybe partaking but we usually just make them hotdogs or burgers or whatever). Point being I haven’t really missed having the 22 in my circumstance.

  9. Have St Augustine in my yard which always comes in in patches throughout the spring (& is then very thick through the summer and fall). However, one side of my yard looks especially thin and slow growing this year and there also are some greyish areas right now. Any thoughts on what I can do to promote the growth/fight off whatever this is? Already did the usual weed and feed.
