The Austin Police Department's website defines a "hotshot" call as "incidents which are in progress are an immediate threat to life and/or public safety. ... These calls are dispatched immediately." 

     

    I thought it took police 2 hrs to get there. That wouldn’t make sense but I don’t know which story is correct.

    Police are usually priority dispatched based on details the dispatcher receives from the caller. It’s highly unlikely that the situation would be one as you described and police took 2 hours to get there.

    I'll spoiler the longcat version and put the rest of dinner in the Christmas Menu thread later, though that one is highly intimidating.  Buncha gifted culinary assholes around here.

    The short version is that goose is fucking awesome.  Just do it.  Follow the Serious Eats instructions and you'll be good to go (though the gravy got mixed reviews).  Turkey is great, especially for the larger crowd we have at Thanksgiving, but I'm going to indulge in goose at Christmas as much as possible from now on.  And if I can do it, anyone can.

    Gave the skin as many pricks as possible to let the fat drain.  I don't even know what to do with that one.

    The guide suggested a 12-24h uncovered dry brine, but I usually do my turkeys longer and covered with cheesecloth, so I extrapolated that to goose and it turned out great.

    I took advantage of that time window to make a stock with the wingtips, neck, and giblets.  Ashamed to say I'd never made stock before, but yeah, it's good stuff:

    Stuffed it with Nigella Lawson's verrrry English recipe, which involved pears, cranberries, onion, and other stuff.  The likelihood that anyone would have tried it was <1%, but I never got it up to a temperature comfortable enough to serve it anyway.  Next time I'll just stuff with aromatics.

    Finishing out to internal temp at 400' convection, I was worried I let it go a little too long:

    Nope.  My older son fought tooth and nail for every bit of that dark, crispy skin.  It was glorious.  Note copious amounts of fat in the background pan.

    I made the gravy per the Serious Eats recipe, but it was polarizing as the sherry deglaze added a lot of sweetness.  Or it could be that since I have a mental hangup that I suck at making gravy, it was just crappy.  I dunno, might try something different next time.

    Since my wife is a Miss State grad and my older son is thinking about going there, it was served Crossbones Style in memory of Cap'n Mike Leach:

    And it was fanfuckingtastic.  I don't consider myself much of a cook and don't toot my own horn much, so I'll give all the credit to Serious Eats and the goose here.  It was rich, indulgent, meaty goodness.  Even though there's less meat than a turkey, it's really more filling and satisfying.  Even those who are resistant to dark turkey meat thought it was great, and the skin was basically fried from all the insane amount of goose fat.

    So if you're thinking about it, try it.  It's not cheap unless you're comparing it to a heritage turkey (which I have not tried yet), but it's no more effort and was a big hit.  I didn't run into any significant doneness discrepancy in the breast/thighs, so I don't think spatchcocking would make a big difference.

    Most of all, I had a great time prepping and cooking it with my son, and enjoying it with family.  And also, I have leftover goose fat.

    One of the reasons I love cooking is the experience and sharing with others. That gives me the greatest satisfaction. It sounds like you accomplished that. Thanks for sharing, I definitely want to try.

  4. I’ve got a 25 yo nephew that will mooch off my SIL until one of them dies. She had him in her first marriage and remarried when he was 6 and I think she has guilt that he wasn’t treated like her other children from her second marriage because her second husband wasn’t his father. That’s actually probably true. He barely graduated high school, failed out of junior college with a 0.0 gpa and has had about 5-6 jobs a year since he was nineteen that usually last for less than 2 months. He says he wants a job where “no one can tell me what to do.” He thinks he’s gonna start his own podcast. He used to tell us that he’ll probably just walk on and play football for Texas. He is truly a narcissist and believes everyone else is crazy, not him. He now works at a coffee shop in Buda. Oh, and he has a 2 yo daughter that he can’t support and ignores. He barely has a relationship with the mother. My SIL gets the kid about every other weekend, then invites him over and takes staged photos so she can send them to the family to show everyone what a great dad he is. When the family gets together, my BIL ( not his step dad) and I drink beer and make fun of him, but what I’ve learned is that you can’t shame a narcissist because he thinks you’re the one that’s fucked up. At least I’m able to use him as an example for my kids of how not to live your life.

    We were on a road trip when the kids were smaller and the kids were stressing us out a little. The wife started complaining rather obnoxiously about my driving. I sighed heavily and ignored her at first but she continued. I asked her very calmly to please just stop and leave me alone. This continued until I completely lost my shit and yelled pretty loudly. I’m still pretty ashamed of my behavior. When I calmed down I apologized profusely to my wife and had a lot of explaining to do to my kids. That being said, something physical is so far out I can’t imagine ever going that far. Then again, I don’t think I’ve ever dated the ultra crazy variety of female, just standard irrational crazy.

    I'm a dry brine spatchcock turkey guy, so feeling a little like a memorable disaster of epic proportion is on the horizon.  There's not much online about spatchcocking geeses, but I'm guessing since the breast is darker meat there's less of a risk of drying it out vs. a turkey.  There's a Serious Eats page that includes dry brining following blanching (another common theme), though it's not the usual Kenji level of nerd vetting.

    I've read a few different approaches online as well as Nigella Lawson's recipe.  I'll probably piece something together by Christmas Morn that involves blanching, dry brining, Lawson's stuffing, and setting the kitchen on fire with a deluge of goose fat.  And roasted potatoes, natch.

    The fortunate thing is that neither I or my family has had goose before, so if it's awful I can just tell them they are Philistines with no appreciation for the finer things whilst feeding the dog under the table.

    Crockett is a really interesting dude. He claims to be a descendent of Davy. I believe he grew up in San Benito on the border. His songs sound like country music from the 50’s and 60’s. I wasn’t sure about his music the first few times I listened but it’s really grown on me. I now listen regularly.

  9. My dad had dementia before Idiopathic Pulmonary Fibrosis finally killed him but he never forgot his loved ones. Mom is in an assisted living memory care place now so I guess I know what is in store for me. I just don’t want to forget the people in my life that have meant everything to me. What a terrible and lonely existence. I saw Hayes Carll at Gruene recently but he didn’t play this. Probably a good thing or I would’ve lost it.

  11. Choking is what makes this allegation a lot worse. Strangulation is actually tracked in Texas and kept in a database because it is one of the strongest correlations to whether a perpetrator will commit homicide. There has been reports of physical signs associated with the other allegations but not the choking one at least from what I’ve seen. Symptoms are not strong evidence. Anyone in a domestic dispute will have rapid breathing and pulse. I think if the other stuff is proved it will be enough to get him fired( and it should) but the choking takes this to another level..
