    If you don't whip the egg whites, your mixture will be runnier with less structure.  It's not the end of the world but I prefer the texture with egg whites whipped to soft peaks and then folded in.
     
     

    It does, but it’s not to the same consistency as one would if beating whites to soft peaks. Appears you just beat to mix and then the important part is the slow mix of the booze so as not to denature the proteins.

    I’ve always made AB’s aged nog and while it’s good, as others have noted it tends to collapse over time and I haven’t really noted any real benefit to the aging process. Also, it tends to be thinner than what I want from nog. I’m hoping the good doctor’s recipe hits the sweet spot for viscosity on a three week aging to christmas

Got down to Whitsett the weekend before Thanksgiving.  I was able to bring one of my best friends who is currently fighting stage 4 colon cancer and his treatment schedule finally aligned.  I've spent a ton of time at his family's place in East Texas but he hasn't been to our ranch since we got it in 2021.  If the theme of the weekend was to do as much South Texas stuff as possible in the event he never gets back, we 100% checked that box.  He's not too mobile in the mornings, so I sat Saturday AM by myself, saw a big 8 point and some smaller 8s.  There is a freakshow (8pt) I've seen on cameras that is on my target list this year, but I have a ton of meat in the freezer and I told Mrs. Laz I likely won't soot a deer this year.  Well, freakshow showed up and I let him walk.  Hard to describe him - his left antler is a typical 4 point, but his right is like two long points kind of twisted together.  I don't really care about trophies, but I'm a sucker for weirdos.  To be determined.  

    Saturday to the feed store, then we took a detour to Choke Canyon SP where we took a short hike along the shoreline, jumped a 6' gator, and then--owing to a misguided shortcut attempt--wound up low crawling through pig tunnels in the brush with me using bare hands to open the way so he wouldn't snag his chemo port.  Lunch at Max's, yardwork, then an evening sit.  Not too much in the way of deer coming to the feeders.  It's pretty green and I watched a small buck browsing on granjeno for a good bit of time that morning.  Towards sunset, a group of Javelina showed up and we watched them for a while until sunset.  

    Sunday morning, I went back out and the deer were similarly sparse and unremarkable.   In the almost three years we've owned the place, I've only seen pigs in daylight once.  I was on foot and rushed the shot, and they escaped unharmed.  I'd put a 0800 hard stop in order to clean up and break camp before noon.  Well, lo and behold, about 0750 a sounder of 6 pigs shows up at one of the feeders.  I lined up on a good eating black pig and took the shot.  Didn't see it drop, but a brown one went down kicking.  When the dust settled, I approached and found that the black one dropped like a rock DRT, and the 168gr .308 brained the brown one too.  I processed one, left the other for the coyotes.  Cooked up the backstrap and Mrs. Laz, despite her initial misgivings, cleaned her plate.

    just reached the Peterman era on our re-watch and I am here for it.

Men in Blazers reported that bc of FIFA rules that the same continent can't hold successive tournaments, they added South America at the eleventh hour to block Europe, Africa, and South America from '34.  Then, shortly after the 2030 hosts were announced, the House of Al Saud dropped it's '34 bid, and then shortly after FIFA Pres announced any competing bids had to be submitted within three weeks or some ridiculous timeline.  Get your robes ready for your winter world cup '34

  7. Been slow playing S4 partly bc I forgot my hulu password, and partly because I didn’t want the ride to end. Finished it last night. Standing ovation, hats off, bravo to the creators of one of the best television shows of the 21st century, and a genius work in the pantheon of Black art. You have an amazing spirit. Thank you for sharing your time with me.

    I want to write the story of the 2017 Rockdale Tigers State Championship because it is an amazing story that the Hollywood scriptwriters couldn't have fashioned better if they tried.  Other times, I want to write it as though someone wrote a book about it, then the book got sold, and then the Hollywood scriptwriters get involved and totally muck it up

    I celebrate David Simon's entire catalogue.  We just finished a rewatch of treme after many visits to New Orleans since the first, the most recent being in March for Saint Joseph's to go see the indians.  MIGHTY COOTIE FI-YO!

    This is the way.  I've had colonoscopies every two years since I was 16.  

    Don't be a puss puss on the drink.  Just put it down.  Depends on what your doc gives you - sometimes it's the big jug of salty awfulness, sometimes its the wee bottle of sickly sweet. 

    These days they give you propofol, which is the stuff Michael Jackson was talking to go to sleep at night.  You will be lights out and then farting in the recovery room before you know what hit you.  Back in the versed days, a man possessed of a certain resolve could steel himself to remain conscious during the procedure, for science.  Propofol laughs at man's steely resolve.  But seriously, the big fart after the colonoscopy is one of the greatest pleasures in life.
