    A seminal moment in my bbq education.  Bringing a headlamp was the best decision I could have made.  Captain Stabby just had me follow him around all night peering the light over his shoulder when he'd check the meats and fires.  And poor Wes, he'd just bought the Pappa Charlie's trailer and that thing was spic and span.  Then John said go and within the blink of an eye there was so much salt and pepper thrown around that place there's probably still pieces of cracked pepper wedged it the joints of the sheet metal.    

    Last saw him a few years ago at Black Box.  I said hello from the next table.  He said "WHY ARE YOU SHOUTING"

    I pretty much decided this weekend that's what's coming. Only problem is that we're really only out there 1-2 days at a stretch.  So far, my schedule has me getting to Whitsett after dark on Friday, leaving Sunday afternoon.  With that, I'm either running snares in the dark on Friday, or only trapping Saturday night.  I know fuck all about snaring coyotes, but if I get to learn it as part of developing the wildlife management plan, that's a win for me, a win for the land, and hopefully a loss for the 'yotes.

    Thermal is in the works for me.  A couple of my partners already have thermal setups but I haven't gotten to try them out yet.  I'm making plans to invest in a decent rig next year.  I've been doing some research lately.  Will probably go thermal, as we've got flare stacks on three sides near us that throw quite a bit of ambient light that would probably mess with NV.  Even then, our place is almost entirely senderos with little open field, so even with thermal I suspect it will be challenging to get clean shots. I suspect it may come down to shoot pig -> leave pig in field -> shoot coyotes that come to eat pig.

Was out on the property with Mrs. Laz weekend before last.  We've had a renegade buckin bull from next door who got through the fence on the property for about a month now.  At first, it was a cool novelty but it's quickly becoming apparent he needs to be returned to his rightful owner at the earliest opportunity.   I'm actually curious how many hands that will take to accomplish.  In addition to the ankle-breaker footprints he's leaving all over the place, he pretty much makes his own path through the interior brush.  A little bit of that is a good thing as it gives us some access that we'd otherwise have to bushwhack, but I suspect it has also given the coyotes better access too.  

    In that regards, we saw a ton of coyote scat, and jumped one on the perimeter road on our first night.  Had it dead to rights at about 15 yards, but I was driving and couldn't get my rifle readied before he took off.  I reckon I'll never have an easier shot on a fawn killer.  Then, Saturday morning, we were sitting in the blind at sunrise with the windows open when a coyote started howling and all of a sudden, the entire countryside erupted in howls.  Sounded like dozens.  It was pretty awesome, but it also convinced me immediately that pigs aren't going to be our biggest problem.

    Thanks, man.  Got very lucky with the timing of the purchase.  Place was pretty trashed up by the goat farmers we bought it from, and in a few short months we've really turned the place around.  This first season should be a big learning experience for us.  None of us have any experience in brush country.   My partners' old place was out near Brady, so a totally different world. Recently found out the previous owners were pretty much hated by everyone in the surrounding area because they'd shoot everything that moved.  We're trying to get the word out that there's new management in town...

    We are on 99 due north of Choke Canyon in the NW of the County, close to where McMullen, Live Oak, and Atascosa Counties meet

Unfortunately, no.  I watch HBO Max on xbox and it is pretty abysmal.  For me, it always defaults to english dubbing no matter what the last setting was.  Then, have to pause, switch to italian with subtitles, and restart playback.  It really is a considerably different artistic experience in the native tongue.  I have heard that some of the dialogue is actually different in english, but I can't verify that.  I can verify that the english dubbed version is terrible and I only lasted about 30 seconds on S1E1 with the dubbing on by accident

    I haven't yet.  There's a guy on the gomorra subreddit who has offered to provide the download to anyone who asks, but I'll wait for it to come on max.  I heard the same about S.3, and it was good, so I'm hoping S4 isn't as bad as people make it sound.  Also keeping my eyes open for the L'Immortale movie, which is billed as both sequel to S3 and prequel to the series

The fact there isn't already a 1000 page thread dedicated to Gomorra: La Serie is a gotdamn human tragedy.  It is one of the best shows I've ever seen.  If you thought the Sopranos was groundbreaking because the protagonist was a sociopath, I present to you Gomorra:La Serie, where there are no discernable protagonists and everyone is more or less murderous, unrepentent, and beyond redemption.  That we could spend years across boards and multiple threads hashing over the steaming pile of dogshit that GoT became, and there are like three casual mentions of Gomorra is a travesty.

  9. Whoa...is that what I think it is?  Need more info on this.  What kind of contraption do you have it on?  How does the lid take the length?

    Pork shoulder sliced and marinated overnight. I forgot to order pineapple juice so did Roy Choi’s mojo marinade and tricked it up as a trompo. About 18hrs in the marinade and roasted for about 2.5


    The rig is pretty high tech - a heavy gauge stainless skewer I bent into a hook, coupled with a 1/2” steel plate I found in the trash and drilled a hole through to fit the girth. Two more plates below that to create a little gap for the hook so it would sit level. Large egg Probably wouldn’t have taken the length if using the grate so I just set up on the deflector.

    Carved some pieces off and finished them on the griddle with pineapple and onions. All in all, a decent first effort but lots of room for improvement. In non-covid times and with more pig, this will make for a great cookout dish

BBQHack shipped and arrived within a couple of days.  First impressions out of the box are about what one would expect for a griddle top in that price range.  1/8" steel all around, cross bracing underneath.  The build quality appears adequate - it's a little out of square but mostly sits level on the grill top.  Seasoned it up over the weekend, then did a trial run with some bacon to get it nice and greased up.  Just a minor little third degree burn through the silicone glove just north of the thumb knuckle trying to flip it after seasoning to cook the bacon.  PSA - those ribs on the grip of the silicone mitt are spaced just about 1/8"...they perfectly accomodate a piping hot edge of carbon steel griddle. 

    Smash burgers last night slammed and went hard.  There's a mojo pork shoulder marinating since yesterday morning gonna get et tonight

    Thanks for that.  Got their gas griddle hack on the way.  $119, and was able to use the funny money in my paypal account.  That's a win all the way around.  A smaller surface area than the others, but that rear grease hole is probably the best solution of the toppers I've seen.  Will revisit after some time
