  1. Necro-bump. :)

    Decided to revive my old HPI Nitro over this past long weekend.  Instead, I snapped off the fuel inlet on the carb while trying to change out the fuel line.  Guess I'm really diving back in and looking for parts for this thing... :)

    The lessons are set up on a linear path, even I’ve found the early portion of their course easy and a little repetitive - while good for building over time from nothing, probably not good for someone with your background. I imagine the memory will kick in eventually. You can jump to more advanced lessons but I’m pretty sure that “costs” in app currency you earn by completing lessons in the free version. You can do the paid and skip around, but my understanding is that if you’re going to pay, there are better programs.

    That said, it’s free so there’s no downside I suppose.

    Same here, except growing up in NM.  We paid for the family plan because the kids wanted to try learning some new languages.  I'm diving into Spanish, but my crazy teenage son is deep into Mandarin now.

    B) Agreed with Dry Elbows, above.  Not sure if this is your first brisket, or just your first on a pellet grill.  I like Aaron Franklin's brisket vids on youtube, if you're new to brisket in general.

    Along those lines, the boy is home now. Before he came home, he spent a week visiting his German exchange family. He commented casually about how he wore his hoodie around the house, because they have the heat set rather low “because of the war.” I was texting with them yesterday about Christmas, life, etc. The conversation led around to a point where I wished them a merry Christmas, and then a wish that next Christmas would see “peace and victory in Europe.” I typed those words without really thinking of the echoes. Then I read them. For fuck’s sake, we can wish people “victory in Europe” non-ironically. WTF? Fuck Putin. Fuck Russia.

    Glad to hear the boy is home.  My mom was a kid in England when Germany was trying to reduce England to rubble.  The juxtaposition of normal life going on with bombs/missiles falling from the sky is insane.  Just having heard stories from her, it is ridiculous that we have to convince anyone that this has to be stopped.

    As my 2016 Silverado sits at 55k miles, this information does not please me...

Dad had a '68 LTD boat that I loved as a kid.  390 cubic inch v8 that drank a gallon of gas if you glanced at it sideways.  I thought those hide-away headlights were the coolest thing on the planet.  If I ever find myself with piles of cash laying around, I'd love to build a custom cruiser version...     My unprofessional opinion on grill pans v. flat surfaces is that grill pans actually allow the oils and rendered fats to more evenly sear the meat.  I usually rock the pan back and forth a few times while cooking   The oils are so hot they almost fry the surface like bacon and the grill surface allows them to flow underneath but making contact with the steak.  In a flat pan the oils can’t channel underneath the meat as evenly and it’s harder to maintain consistent contact across the cooking surface. 

     

    Why Is Oil Smoke Point Important? 

    Smoking oil isn’t always a problem: there are times when it’s inevitable, such as when you’re stir-frying in an extremely hot wok. Typically, however, smoking is a sign that your oil is breaking down. 

    When oils break down, they can release chemicals that give food an undesirable burnt or bitter flavor, as well as free radicals that can harm the body. Before using any oil, make sure that its smoke point can handle the cooking method you plan to use.

    I always use ghee, but may have to give avocado oil a shot next time...
