Isn't it nice when the wife is out of town for a few days?
On occasion. I've got the pit fired up and am smoking anything that ever has mooed, oinked, or clucked at the moment.

Long time listener first time caller
4 reheated, roadside tamales with green sauce, to which I added some bag cheddar and some Buffalo Wild Wings ranch from a leftover takeout container
Yes, my wife is out of town, and yes, it was excellent .

Getting a thin, vinegar sauce ready for the rib cook. Just for the wrap and a whisper before it hits the plate.

Tomorrow, because why not, I'll be smoking a brisket, a rack of spares, a pair of beef cheeks, some chicken thighs, and some sausage. Tonight, we live life!
edit: I like how the smoke stack appears (is) taller than the chimney next door.

Burger purists crack me up
I wouldn't say I'm a purist. I'm just calling out my favorite burger of all time (Hamburgers by Gourmet, Houston). I usually don't stray too far from the formula though, even though a mushroom burger or something with bleu cheese or an egg is delicious. But particularly if I'm at a place I haven't been, it's a burger, all the way, ketchup, mustard, mayo, shredded cheddar cheese. If they can get that right, I'll be back. For most of my childhood, I was a "hold the pickles" type. Finally it clicked, and I was really happy about being able to simplify my order to "all the way" or "drag it through the garden" if my stewardess or one of my fellow passengers speaks jive.

Unpopular opinion. That spicy ketchup is gross.

Mayo on one bun and mustard on the other is the proper way to enjoy a burger
I'm a bit evangelistic about this, so forgive me for repeating this. Ideal burger has (on the bottom bun) mayo mixed in with shredded lettuce and shredded cheddar, which not only is a good flavor combo, but is a good barrier between the patty and the bottom bun to keep the bottom bun from getting soggy. Next you have the patty. Pickles on top of that with ketchup to hold them in place. Two slices of tomato over that (seasoned with salt and pepper). Next, you've got chopped onions mixed with a little mustard and a light swipe of mustard on the top bun.
Toasted buns enhances this further.

Mighty fine is plenty good, esp when we want a quick weeknight burger.Agreed. We stopped at the one in Hutto on the way home from Austin once, and while it wasn't earth shattering, it was worth the stop.

This is what I'm sayin'.
Funny story: when the boy was maybe 10, we went to Michi Ramen. Had a bit of a wait, so we were waiting outside. The sign outside the Yellow Rose was advertising their lunch special -- "Steak lunch: $5.99" The boy sees it, and says "hey dad, you and I should go eat there sometime!" Mom, sister and I crack up, he looks confused. I explain to him what the Rose is, and he got embarrassed as hell.
One summer during college, a friend and I had a job without much supervision. We went to the Men's Club in Houston for lunch. He got an overpriced shrimp cocktail and I got the best damned chicken tenders I've ever had in my life. Not a bad way to spend a four-hour lunch break on a Friday as a 22 year old.

Hickory is the perfect wood for smoking. It is the primary wood in OG barbecue. Pork bbq culture is highly dependent on it.
Hickory is fine. It burns pretty consistently like oak does. But the flavor is definitely more distinct. I like it, but it's one of those flavors I can pick out really easily compared to other woods. I prefer pecan. It's more subtle (almost sweet). But it burns a little more quickly than hickory or oak. So unless you have a lot of it and can get it at a reasonable price, it's less economical.

There is no best. But the fact that Jerry Reed hasn't been mentioned yet when Dave Matthews has been mentioned (even in jest) is a crime.

In the days of my youth, I was taught what it means to be a man.
It was a beautiful day. The sun beat down. I had the radio on. I was driving.
I was born in a crossfire-hurricane.

Mike Thomas at 4T's in Forney is retiring at the end of May. Is there any other joints in DFW that primarily use hickory like he does?
Not sure on the hickory question, but I definitely was pretty underwhelmed with the place when I tried while traveling back to east Texas from DFW. Maybe I just caught an off-day. Best to him in retirement. Don't mean to be a dick. But I'm kind of a dick.
Edit to add that Stanley's in Tyler uses pecan, which is in the hickory family.

The Law firm founded by one of my closest childhood friends, who hopefully will be coming to his first game at DKR this fall (and to the Surly Tailgate), just sued the administration this week on behalf of IMLS.

The Sphere is probably the coolest concert venue EVER. I saw Phish there a year ago. It's almost like I never really need to do it again. I mean, David Byrne Okay. But for the most part, I kind of want to see some outdoor shows again.

I once hit a man in Dearborn, Michigan. A hit and run. I hit him and just kept on going. I don't know if he's alive or dead. But I'm sorry. Not a day goes by I don't see his face.
