1. She’s scheduled for Saturday morning at Texas children’s. Earliest pcr they could find per my sister.

Update. Niece’s PCR test came back positive. Only symptoms persisting are loss of taste/smell. She doesn’t have fever anymore and feels fine. My sister/niece’s mom is beginning to show symptoms. Not surprising since they shared a long car ride with niece being symptomatic after the dad left her in San Antonio after he/his hoe tested positive. Im glad I didn’t go home for Christmas.

My uncle had another quadruple bypass this morning and is so far covid-free. Doctor’s more concerned about covid than the bypass so I guess that’s something.
2. Called a few places around Dallas listed on the DHS website and they all responded the same way which was....

My cardiologist sent an email saying they would vaccinate according to the CDC schedule. When I responded to add me to any available standby list they told me they aren’t actually vaccinating anyone. Wtf. That’s a strange series of communications. Back to relying on H-E-B again.

Looks nice.  I got pork butt @ 25% fat in my recipe calculator, which is based on the one that Judge Roybeanbag shared here a while back...so 80/20 puts you at 5% fat which is pretty low. Probably alright for snack sticks, but not sufficient for sausage imo. 50/50 with butt gets you to 10-12%.  I'd love to find fat back as judge mentioned in another thread, but I don't exactly see that shit hanging out in the coolers at HEB.

Ask the meat cutters at H-E-B. Sometimes I’ll call ahead and ask them to start setting aside beef fat trimmings for tallow. I make 4 or 5 big mason jars and share with family and friends. Lasts a while since I don’t use it as much as I used to. Thanks a lot to genetics finally catching up to my arteries. Maybe they can do fatback the same. They usually charge me around $1/lb. The best was when they said, “we’re trimming all the prime/wagyu stuff now. How much do you want?”

All of it. Obviously.
4. They should have done this years ago.

It was probably a co-owned position with the mayor’s office to share expenses. Funding agreement was never signed back in 2001 because the mayor got distracted. Took this long to get a new agreement negotiated. /satire
5. So DPS had a dozen troopers within 2 blocks of the Governor's Mansion plus the surveillance system and the fucking arsonist on tape, and in 12 years...they have a grand total of zero leads?  Every time I read "And now Texas DPS/Texas Rangers are investigating"...I know then that no closure will come to the case.  These guys can fuck up a cup of coffee.  Lived in Texas 25+ years, I'll never understand y'all's idolization for high school football coaches, preachers, and police officers.

People still think that was arson? Interdasting

6. “According to body cam footage, Shimanek told his supervisor that he pulled Dillon Puente over because he suspected him of having narcotics, and he arrested him so he could search his car.”

What in the fucking fuck. “I had a hunch” is something they tell their supervisor in hopes that they’ll be told, “aw shucks, why didn’t you say so?!?”

Naw, no problem here. They obviously need raises and to hire more of their friends to make them feel better.

7. So when the new super spread strain that’s in the UK right now gets here, we start all over again?

What seems to be the most amazing result of this new vaccine production process is how much faster we will react to new strains. For example, back in October while responding to a story on the vaccine currently being administered worldwide the UT Austin lab threw in something like “this process is so much faster than the older methods that we already have the next vaccine candidate ready for testing after identifying the next super spreader strain. This would normally take 12-18 months.”(Paraphrasing)

I’ll try to find the article again and post a link.

8. Picked one of these up today. Haven't seen them before in HEB. Guessing it's a Christmas thing? Either way, will report back Friday.

Several H-E-B in Austin keep a regular supply of wagyu now. Either the briskets or preformed patties or a regular selection in the meat counter. I smoked a 5 lb wagyu chuck roast this week that was outstanding. I think the briskets are a different brand with an H-E-B label slapped over at slaughter H-E-B. I don’t know that I’ve seen the label in your picture.
