    That article I posted does a deep dive and is very informative.  It's probably already been posted in this thread.  His serious eats sous vide guides are excellent.  (although I've come to the conclusion that you don't need to rest steaks that have been cooked sous vide; you can cut and serve immediately after searing with no loss of moisture).

    The temperature will dictate the color (doneness), not the length of time (once the meat has fully gotten to that temperature).  2 hours is probably sufficient for most cuts of ribeye, but if you go super thick (over 2") then you would want to add a little time to make sure it fully heats all the way through.  Length of time beyond that will only affect texture.  I think Kenji Lopez-Alt did something on this a while back that suggested fattier steak cuts don't improve after that time frame, and if they go too long the meat can take on a mealy texture.

    Once you pull it out of the bath, pat it dry (so you can get a good sear) and rest on a rack for 10-15 min.  Then sear for ~1 min per side on a ripping hot cast iron.

    I can't imagine going to 137 with a ribeye unless it was really thick and then refrigerated for several hours after water bath.  I did a 22 oz ribeye on Sunday (cut from full prime ribeye at costco to about 2 inches thick).  128 for 2 hours, then patted dry and put in the fridge for about an hour (waiting on brother-in-law to show up).  About a minute on each surface area in screaming hot iron skillet with avocado oil and butter, basting with the butter after first side was seared).  In all took about 3-4 minutes to sear completely.  

    Came out a perfect rare+ to medium rare.  The thickness of the cut kept it from getting to full medium rare, but there was very little browning beyond the very edge (consistent color throughout the cut).

    It is virtually the same scenario every single time. Guy from out of town. Most all are dark headed. Goes out with friends to entertainment district. Disappears. Friends initially think nothing of it. Found dead in lake. The one where I thought the police might have some leads was the guy last seen at taco truck. His friends reported him missing within the hour and his body was found within hours. But they said he was drunk and fell in the lake. That was the one in May I think of last year. In from out of town out with friends…dead in lake. 

    I heard that they found remnants of...Chilean Sea Bass in his stomach.

    Haley is taking the direct tack.  She is in to outlast him through the primaries and convention.  And sadly her fate is totally binary.  She's either the first female GOP nominee or dead by his hand.  Kinda sucks, but also kinda admirable.  But she is summoning more and more support behind the scenes that I could have possibly realized.  We'll know more in one month's time obviously.

    I am starting to firmly believe more and more that there are two others who are remaining in one case-dead silent.  And in one case-overly ball sucking to MAGA nation.  The quiet one may very well decide to jump in at the last moment when Trump is ineligible or dead, and he'll win the general election.  Glenn Youngkin.  The one who has been busy sucking Trump's taint without Trump even noticing is Greg Abbott.  Abbott thinks that by embracing MAGA nation, that if Trump can't run, he can slide in at the last minute.  They're both quietly counting on Trump not being around on the ballot in November.  Youngkin's only reservation is he can still win this thing down the road someday in 2028/2032, Abbott is nearly done for overall.  

    But Haley has very discretely marshaled resources in the last few weeks that I didn't think possible.  and she's showing more fight than I thought possible.

    Taylor's in makeup and Alina is dressed for her parking garage lawyer gig, so it's not 1 to 1, but it's one of only a few pre-surgery pics of Habba and the first image result for Swift. 

    Regardless of any extraneous factors, there's no amount of silicon and lipstick you can put on a pig to make Alina Habba hotter than Taylor Swift.
