Shit I've Cooked Lately
Hard to follow the last guy, but this was dinner tonight. Brined, sous vide bone-in pork chop, mayo seared, with a shallot and herb pan sauce, roasted herbed root veggies, and Grammy’s famous baked beans.

Chili w/o beans
Yeah, mistakes were made. Added all 28ish lbs of chili grind beef at once, rather than in batches, which meant that I was unable to properly brown/stir without concern for burning. That got me nervous, so I added beef broth to up the liquid content and help with a more even cook, but resulted in the "gruel" consistency. It was like 7:1 chili grind to diced chuck, so there was still some chunkiness; it just doesn't come through in the photos. Also, this still simmered/thickened 2+ more hours before turn in. Not my best pot, but the flavor was excellent and it has been money on chili dogs or frito pie.

2020 Super Bowl Food/Drink Thread
No pics, but we made chili dogs with the leftover chili, and I smoked/sous vide a Boston Butt for pulled pork that we used in pulled pork bbq nachos (with japs, quick pickled red onions, cheddar, and BBQ sauce).

2020 GSABA Chili Cookoff No hardware, but I’ve got 3 gallons of leftover chili in my freezer, so I’ve got that going for me, which is nice.

I got it in my early 30s, but it was basically a non-event for me (other than preventing me from swimming in the middle of a hot Houston summer). My wife was diagnosed with it after her hospital stay for pneumonia. She was actually complaining about back pain when we were initially in the ER for her pneumonia. It's possible she had shingles that led to pneumonia, or maybe the pneumonia weaked her body enough to clear the stage for a shingles flare-up. Either way, her rash was relatively minor and healed quickly, but she still has back pain on that side of her body a few weeks later. We will both be getting the vaccine when we can.

Chili w/o beans
@Snow Dog Last year I did 30 lbs of chili grind beef. Was thinking maybe I should add some bigger chunks this time around for a different texture. What's the consensus, just get a chuck roast or two and piece it out or should I be thinking of a different cut of meat? Also, after making jambalaya, I liked the technique of adding veggies in multiple stages to get a variety of flavors from the same ingredients. Onions are one of the first things I cook (in bacon fat before the chili blend and meat is added). Maybe I should add more chopped onions again after the meat is cooked, when I add the tomatoes? Am I overthinking this?

I've only ever had one on my line, off a boat dock in the waterways a little east of New Orleans. I tried to set it, and it took off, but then after a decent run, it must have spit the hook. Probably just as well as I was in no ways prepared for landing one of these monsters.

Supposedly they are close to creating a "universal" flu vaccine. It focuses on a part of the virus this is common across all strains. I read about it maybe a week ago. That will be nice to have.

@Snow Dog - I'll be cooking next Friday at the GSABA Chili Cookoff. It's not an official chili cookoff - just an excuse for the different builders/vendors to make chili and host customers. I think I posted some pictures here from my experience last year. I'm hoping to place this year.

Tried my hand at jambalaya for the first time. Watched an old Paul Prudhomme video and tried to follow his method. Tasso, abdouille, and chicken thighs. Fucking delicious.
