  1. Long story short, I have to re-season 2 of my CI pans. I did each one of them 3x with grapeseed oil on the grill at 600 for 45 min to an hr. All times, the end product showed flakiness as seen in the picture.
     
    Does anyone know why this is happening? I really loved to cook on them so I hope I didn't screw them up royally during seasoning.

  3. 1. Patients often go home with a PICC line and there is probably more of a push to do that currently to avoid COVID-19 transmission in the hospital. Your father is immunocompromised so once he is medically stable, isolation at home is better than being in a hospital.

    2. Hospitals are penalized financially for patients who are discharged and then readmitted, so there is pressure on the physician and medical team to discharge the patient only when it is medically appropriate.

    3. It’s possible the medical team finds you a nuisance but they deal with nuisance patients or families routinely and everyone has too much on the line to let personal feelings negatively affect medical decision making. If they’re telling you it’s time to discharge with a PICC line, that’s probably the right plan unless you have reason to believe they are completely incompetent.

    I winged the pasta with a 1:1 cup:egg ratio (unbleached AP flour)

    As far as cacio e pepe, I didn't really use a recipe but I used these 2 videos as a guide

  5. Sauce looks perfect.  Never seen cacio e pepe made with tagliatelle before, but hey...

    First time using the pasta roller so I just picked one. Once we had the noodles it was more of a "now what do I have in the pantry where i can use these". So it was either jarred pasta sauce that I keep for my daughter or a bastardized cacio e pepe w fontina and parmesan cheese. It actually turned out pretty damn good. After all, it is just "cheese and pepper"

    Still going.  I bought like 4 of them when they were on sale and insanely cheap.  The others will probably be used for chili or something else.  As far as cooking, cooks just like a brisket -- has it's own stale and take it to 200ish.  Currently stalling now around 150

  7. I appreciate all the advice but think I need to set up a few parameters (as I drink this delicious pour over I had to go by from my local joint).

    With the chaos of getting the toddler ready for school in the morning (and ourselves for work), we need something that has a programmable function to start when we (she) wakes up.  While I love espresso, I think we only need a unit for coffee.  I'm willing to spend around $100 for a setup that makes a. good coffee b. has programmable start times and c. isn't a k-pod type unit (allows us to use our own).  I have both a french press and a moka pot for other delicious coffee preparation but we don't necessarily make an experience out of it.

  8. I have a feeling I'm posting in the wrong thread for this. It coffee maker shit the bed and we need a replacement. With my wife and I both being coffee drinkers, but at different times, we need a single serving type setup. We dont want a kpod type system as we prefer to buy and grind our own.

    The one that crapped out on us was the Ninja system that allowed us to brew single serving or carafe. I don't feel like that system was worth the money, hence the petition.

  9. Healthcare worker in DFW here.  I'm calling the Arlington debacle BS.  Just think about how quickly it went public that an Ebola pt hit THR Dallas - there's no way they could keep a positive coronavirus pt quiet.  I do know the ID doc at Memorial -- maybe I should reach out..

     

    That being said, I'm feeling pretty good about myself since I'm a mid-30s, somewhat healthy man.  My 2 year old, who had coronavirus last year, has no doubt given my immune system a boost since she was brought into this world.  Hell, when I went to pick her up yesterday, there wasn't a dry nose in her entire class!  I'm talking gobs of snot rolling down both nostrils of every kid in that room.  Thankfully, she is (we are) on the tail end of her little cold that has been passed around that school and our household.  

     

    We will be fine.  It's the ArmyBrats of the neighborhood who are fucked.  As others have touched on, the majority casualties will come from the health system bottleneck/supply shortage that is most certainly going to occur.  Medline's main manufacturing plant that produces PPE is located in Wuhan.  Additionally, their government just extended the Chinese NY holiday so more people can stay at home.  Halyard is the only PPE manufacturer in the US and they won't be able to scale fast enough.  Almost all of the hospitals that I work at already had a PPE (gown) shortage from Cardinal fucking up and contaminating massive lots of gowns.  Serious procedures have already had to be cancelled due to the lack of gowns in December.  Most hospitals are trying to get in 4x supply orders to get items on hand as quickly as possible, but the pre-existing supply is going to dry up..soon.
