  6. Would be very surprised if this isn't correct.
  7. Correct if in in an offset pit. Direct heat like a BGE or a UDS fat side down. It's a myth that the fat goes through a brisket and makes it more juicy, it will drip down the side and ad some moisture in an offset.
  8. Salt and pepper is correct. Pit temp is important. The brisket is done when it is done. Time doesn't matter. Stick it with a skewer and you will know if it is done or not. If you can't tell if it's done when you stick it, cook hamburgers and hot dogs not brisket.

  16. That happened to me, and in fact it can be, at least in my case, pretty easy to bounce back from it. Once you understand what's going on it can be, in a lot of cases, easy to overcome. Depression is real, and many times misunderstood.
  17. It is dumb to the point you can win but not recruit and expect top 5 classes. On the other hand , and I think this is what you are saying, winning sure makes recruiting easier. Winning is always the best strategy.
