  1. Interesting… My only visit to Interstellar blew away stops at both Truth locations. Very much enjoyed Truth in Brenham, but would firmly put the Houston location into the “fine” category.
  2. I had that very discussion with John at Interstellar last time I was there. He offered me the outside cut which led to an extended discussion on the idiocy of some cutters and the customers that think that’s good brisket.

    Texas BBQ

    Another vote for Burnt Bean. On our recent bbq trip, had both Interstellar and Burnt Bean and would have flipped them in the TM ratings. Both were excellent in all areas but the Burnt Bean would have been #2 on my list because of the quality of all of their production. We arrived at 9:30 am for Interstellar and got to sit at the covered picnic tables, had fans, water brought to us by staff, which beat standing in line (#19) in the sun at Burnt Bean.
  4. Assuming I am not willing to wait who knows how long for Interstellar Saturday (assuming a dumb long line, right?), any places worth going to in northwest-ish Austin How is Styles Switch up in Cedar Park?
  5. Hit up Interstellar BBQ this morning. Fifth in line at 10:10. Moist brisket, tippy turkey, pulled lamb shoulder, peach glazed pork belly, Texaca sausage, jalapeño slaw, and smoked scalloped potatoes. Everything was outstanding.
  6. It was still great the last time I had it, sometime before Christmas. I hadn't heard this news-- I'm disappointed that Noble will be gone. If Interstellar turns out to be really good, I suppose I can accept the tradeoff, but I'm skeptical.
  7. Stopped by Interstellar again yesterday (second time there). Was late in the day, so they were out of moist brisket; the lean was very good, as were the pork ribs and sausage. The smoked scalloped potatoes are really amazing, and the ranch style beans are also nice.
  8. Interstellar had a pimento cheese red potato salad at one point. It was damn good. I haven't seen it there again. I tried to replicate it once, but didn't wait until the potatoes had fully cooled and the cheese melted. Still tasted good.
  9. Interstellar has a traditional Czech sausage which is course ground with garlic probably beef and pork. I don't like the Eckrich style either or a find grind on that type of sausage. Now a find grind bratwurst or knackwurst brings up a different conversation all together.
  10. Interstellar was never a trailer, the owners replaced Noble Pig with their BBQ concept in the same strip mall location. L&L is going to be interesting to me. I sincerely hope they can make the leap. Maybe it helps that they're keeping the food truck open. Absolutely.
  11. Hit Interstellar BBQ for lunch today. Arrived at 10:35 expecting a longer line. I was 5th. Pork belly burnt ends, tamarind lamb shank, and jalapeño slaw pictured. Everything was amazing. Moist brisket, tippsy turkey, and smoked gouda mac & cheese to go.
  12. Yup, I do Liberty in RR, Brotherton's in Derkaville, and Interstellar on 620, regularly. Adding Stiles Switch into the mix is very good. I was really impressed with it, it tasted as good or better than the very best I've had from their Lamar location. I hope they can do it consistently.
  13. Went to Interstellar today and it's legit. Had brisket, ribs, pulled pork, and two types of sausage. The brisket and ribs are up there with any place in town not named Franklin. The sausage was meh. The pulled pork might be the best I've had. Sent from my SM-G950U1 using Tapatalk
  14. NW Austin people, what’s the story on Interstellar BBQ? I asked about this place on the dead site, but no one replied. Don’t see anyone talking about them here. The photos of their bbq look delicious, but curious if that is real or just a Fanta sea. It looks like they in the Noble Sandwich spot.
  15. My son and I hit InterStellar on the way back to Dallas from San Antonio today. Got in line at 12:10 or so and placed order at 1:30. Line moved pretty slow. The food was fantastic and got to meet John and talk to him for a bit after we ate. Good dude.
  16. I went to Interstellar last week, and it was pretty good. Not top 5 in Austin or anything, but brisket and pork ribs were cooked and seasoned well. Not as much black pepper on the brisket as I like, but that's a personal preference. It's worth a shot if you're in the area, better than anything else out here by a fair margin.
  17. Interstellar is extremely tasty, you should go post haste. And I think the Cedar Park SS is much more consistent than the Lamar location. I've had some real clunkers of a meal down at Lamar, but everything has been very good to excellent at the CP site. NW Austin and CP, representing with tasty BBQ.
  18. You might have misread Neon. I went to Interstellar the Saturday the fully opened. As far as I remember (there is a write-up earlier in the thread), the food was pretty good. They still had some kinks to workout on the service (moving the line) side. I decided to give them a month or so and go again. Certainly worth another trip.
  19. Interstellar BBQ is on 620 about a mile or so west of 183. Everything I've had there was really good. I think they are closed for a few days this week, though. Brotherton Black Iron Barbecue in Pflugerville is also really good. Liberty Barbecue in Round Rock is also co-owned by Brotherton. Sit down and order as opposed to standing in line.
  20. I had a good experience at interstellar bbq when I went 2 weeks ago. Sausage and brisket were good. Ran out of pork ribs so didn’t get to try them. This is easily the best bbq option near me. Not much to get in the cedar park / northwest area. Next closest to me is probably brotherton.
  21. I mean... I guess? The south side has Valentina's, Leroy and Lewis, and Brown's. The north side has John Mueller Black Box, Brotherton's, and Interstellar (and Stiles Switch I guess). Then the Centralish has Franklin, La BBQ, and maybe Terry Black's? The north joints are definitely more spread out compared to south or central that's for sure.
  22. $42. Brisket was $32 per pound and the sausage links were $4.50 each. I don't remember the price for the pork ribs or the sides. What I had today was not to the level of Truth, Evie Mae's, Franklin, Interstellar, Reese Bros., Burnt Bean, Terry Blacks, or Micklethwait. It was good barbecue that I would recommend to anyone, especially if they want the true Texas barbecue experience.
  23. LA Barbecue will have a long wait, whereas Micklethwait's won't be that bad. Kerlin is another east Austin spot you can get good barbecue without much of a wait. If you are closer to Pflugerville, Champ's recommendation of Brotherton's place is a good one. Northwest Austin - Interstellar off of 620 is pretty good. I prefer Micklethwait over the others, but all are worth trying.
  24. Stopped by Interstellar BBQ yesterday. Line was about an hour long at 1:15. Moist brisket was great as usual. Jalapeno slaw is also very good - I keep trying to replicate it. Picked up two jalapeno popper sausage links to eat this evening with the brisket I cooked over night. ETA - sausage was really tasty and I've just about dialed in the coleslaw.
  25. For those in the 620/Lake Travis barbecue wasteland: Just tried Jim’s Smokehouse, a trailer on 620 between Steiner and the dam. Legit bbq, good sides. Interstellar has been a Godsend out this way, but this is a good place with good bbq. The owner, Brad, is very nice. Trained at CIA, worked at Mezzaluna and Siena. Just laid a few pieces on a plate to show. The smaller rib is a baby-back
