I grew up in Lake Jackson and graduated a year or two behind his youngest sister. I was once proud for the success of someone from the hometown. I'm now much happier that Kentucky has to claim him.

Not sure. But my thought was it is essentially a continuation of cooking to the right internal temp albeit at a lower temp so it may ease into the resting process as well. And that finishing with smoke was more likely to retain that flavor that smoking at the beginning.

Progress report. Grill pan was plenty hot. Steaks have been seared. About to move to oven to cook to temp and then to smoker for a few minutes to finish. I've switched from blantons to 4rsb oesv. Cheers.

Finally got around to a good detailing only to park in the garage while it's expected to rain for the next several days.
Just about the one year anniversary of taking delivery in Austin last summer with my dad and son for a guys trip. Same weekend Speith won the British Open - serendipitous timing.

I do the same but ask them to avoid the vein. They usually accommodate.

Had leftovers that made the most glorious cheesesteak. Prime ny strip, creamed spinach and gouda over grilled garlic bread.
