  2. I couldn't wait for the weekend. Love the vanilla notes in the Henry McKenna 10 year. Extremely smooth with a couple of small pebble ice cubes from my ice-maker. De-frosting a batch of seafood gumbo that I froze in late December since we've had our last cool weather of the year blow through up here in North Texas. This should go well with it.

  4. I can second the Pinto Canyon Road as well. Beautiful drive! That drive and the River Road from Presidio to Lajitas are amazing!

  6. Found a bottle of Weller 12 calling around today, in Anna at Goody Goody ($25.99). Picked up a Henry McKenna 10 year as well for $28.99. I'll have to open one of them up to try this weekend.

  8. As suggested, Lost Mine Trail fits your timeline and will give you the best bang for the buck. Not that difficult of a hike, beautiful scenery driving up into the basin just to get to the hike (make sure you pass Lost Mine Trailhead to see the actual basin) and amazing views along/at the end of the hike.

  12. Have you considered a Prius? Why do y'all hate Mother Earth? If you're not in a rush, I would test drive all of the cars you're considering. I would suggest a Land Cruiser over a Sequoia. Yukon Denali over a Tahoe. Fuck Volvo and Audi unless you'd like to be on a first name basis with your mechanic. If you're not worried about that, I'd test drive Range Rover as well.
  13. Pretty sure that you can only do a guided tour of Chinati Foundation. Bring binoculars for Marfa Lights. Second the Davis Mtn SP hike. St. George is probably the best place to eat in Marfa. What do you mean by, "Big Bend Day trip"? I'm assuming you mean drive down to the National Park. Do you have a specific hike or two in mind, or do you just plan to drive around the park? If you're in the area, La Kiva and Starlight in Terlingua have a good and great food, respectively. If you're in the area, y'all have to at least stop into La Kiva for a drink.

  16. I've made it twice now. Both times I used Lamb Loin chops (mini t-bones of lamb). I rub them down in salt and Slap Yo' Mama and then brown them in a frying pan with butter and olive oil. Then place them in the bottom of the Instapot or crockpot. Add a little more butter, olive oil and saute diced onions, celery and garlic with sugar cube sized carrots (I take the organic baby carrots, line them up and cut them into thirds). I season this mixture while it sautes for a few minutes with oregano, salt and more Slap Yo' Mama. Add to the Instapot on top of the lamb chops and include 2-3 Bay leaves. At this point you can add new potatoes or fingerling potatoes and mushrooms if you like. I do both. Then add a mixture of bone broth with either chicken broth or beef broth (depending upon the flavor profile that you're shooting for and the wine that you plan to serve with it). Depending upon which one I pick, I'll also add some bouillon. Set Instapot to 60 minutes, highest pressure and select "Meat/Stew". Pour a glass of wine and enjoy the house filling up with the aroma of awesomeness!
  17. I've never been a big lamb fan my entire life. Then I went to Iceland last Summer and tried their lamb stew. I couldn't wait to get home and try to recreate the recipe. Instapot, holla! Damn good stuff!
  18. I don't have any info about Saudi Aramco on the services side, but they're making a huge push into diversifying into various specialty chemicals. They bought a CO2 based polyol company, Novomer, not that long ago and they are hiring like crazy.
