  1. I love garlic - I always did them last, after the peppers, and I’d always forget while processing all the peppers. I would burn them more often than not. After a couple years I just cut them out. Feel free to add them back.
  2. Here’s my recipe I finally put on paper for friends. It’s pretty easy is is really good. My daughter who’s 13 makes this for us nearly every Sunday to eat for the week. We use 1.5 cups of this over skinless thighs in a crockpot or stove and we call it World’s Best Chicken. An easy fast meal that everyone who’s tried it loves. You can up the heat by adding more serranos and or seeds. Serranos are great because they add a heat that doesn’t linger. This will mellow as it sits overnight. Roasting garden grown tomatoes takes this to the next level. You don’t need to add water if roasting fresh tomatoes. I roast those and remove the skin too. Note: Hunts label no longer looks like that. One last thing - i only use the immersion blender now at the end, after I add the cilantro (at the very end). This way i can help chop the cilantro more and can leave the salsa chunkier if I want.

  4. We are in East Texas - SA isn't very handy. It was really odd, for a while there just weren't any openings for interviews, which takes just minutes.
  5. My wife signed up for GE and it took months to finally schedule an interview (no openings). She was supposed to have her interview this week at DFW. It was canceled and she likely wasn't going to go anyway. Now I'm concerned the the 1 year from application expiration will hit before she can complete it. I'm hoping they extend that given the circumstances.
  6. Yes - celery is part of the classic trinity. As with everything, especially cajun food, there are a ton of variations. This recipe is a family recipe I've been eating for 20 years and is so good. I'm just not a fan of the creole version of ettouffe, which is what you get at most places. This is extremely rich being that butter and crawfish fat are the the only liquids.

Ingredients: 1 stick butter 1 lb crawfish tails w/ fat (Must be Louisiana Crawfish, not Chinese) seasoned with Tony’s 1 Cup each Onion and Green Pepper, diced Worcestershire sauce Tony's to taste Multiply the above ingredients for the amount of crawfish you have. 3 lb crawfish makes enough for 8-10 good servings. Thaw crawfish, cut small corner out of bag and add a little water (about 1/8 cup per bag or so) from faucet. Hold cut corner shut and swish water throughout the bag in order to grab the crawfish fat. Dump and reserve liquid from bag. Repeat for each bag. Dump and set aside crawfish in a colander. Make sure all the fat is off the sides of bags. Add a little more water to each bag and shake up to get all the fat. Strain the crawfish by pushing on it and collect the liquid on the other side of colander. Add all liquid together. Season crawfish. Sautee butter and chopped vegetables. Sautee until past translucent and almost a pasty consistency. About 45 minutes. Add crawfish fat liquid and simmer for another 15-20 mins. Should reduce a little and be a nice red color. Add crawfish and continue to simmer for another 30 mins or until sauce has reduced. Sauce should taste rich and buttery...add a couple dashes Worcestershire sauce to taste. Season to taste with Tony's or cayenne…should be decently spicy but not overpowering. Serve over rice. We haven't added Worcestershire recently and it still tastes great.
  8. One of the benefits of marrying a Cajun is her cooking. I love her family’s etouffee recipe, which gets cooked often during Lent. Unfortunately I can’t get etouffee anywhere else because it just doesn’t compare. It is my favorite thing she makes. Butter, crawfish fat, onions, green peppers, and crawfish.
  9. I just binge watched it with daughter and wife (my daughter had been in competitive cheer for several years before taking a break). I really liked the series, the backstories made the show, big props to the director. I really don't want my daughter back in competitive cheer...
  10. The wife and 2 kids moved to Cricket, 3 lines unlimited talk, text and data is $90 no contract. I believe cricket uses ATT towers.
  11. Last stop was the hot springs, maybe a bit underwhelming, maybe because it was crowded but we got in and worked our way to a great spot. Ended up being pretty cool with the river right there and the hot springs on the other. The Rio G was crazy cold but it was cool seeing so many jump in and hang then get back in the hot springs. Someone recorded the temp in the spring at 104. It didn’t feel that hot to this wimp. This was a far #3 on our list of what we did. We had 2 great nights of stars and 1 with overcast. The consensus was the highlight was rafting the Canyon, followed by the Lost Mine hike, then the Window. However, I had a hard time picking between the 2 hikes. I like them both, just different
  12. Hiked the Window today. Gorgeous! I think we liked the Lost Mine better bit this was nice. The weather was overcast and sprinkled some and even drizzled at the end. I love the Lost Mine hike ends all downhill. The Window is all uphill. We walked at pace since the weather was threatening.
  13. Day 2 we rafted Santa Elena Canyon, via Big Bend River Tours. We had a beast at the helm. The water was low so Jared rowed nearly the entire day, 21 miles.
  14. First visit to Big Bend and I have been blown away. Day 1 we planned to do the Window but there was an open spot at Lost Mine so we did that. Simply amazing. Perfect weather for a hike, 70 degrees. We even saw 2 black bears.
  15. Hopefully the clouds stay away...at least 1 night since we planned this whole trip to see the stars...my birthday is Sunday and we'll be doing a river trip that day. Hopefully though SE Canyon.
  16. We are heading out for our first visit the weekend before Thanksgiving. This thread has me pretty pumped. We planned it so we would be there during a nearly new moon.

  18. In 4 years living on the lake full time I’ve pulled my boat out maybe 4 times, and the 11 years before that, my previous boat came off the lake zero times. I don’t expect to be taking it in and out once I get the dock/boathouse situation done. In reality I probably won’t put it in the water until spring so I think for now I’ll borrow a truck. I’ll be getting my son one in a year so I definitely wait. Good to hear just about anything should work. It just looks much bigger and the trailer is huge compared to my old boat trailer. Between the boat and dock updates, I wasn’t looking forward to also buying a truck.
  19. This is really is the way to go for the time being. I live in the country so it’s not that easy but maybe I can talk to one of the many truck owners on my street and ask if we work out an arraignment. I’ve been borrowing my neighbor’s truck for my towing needs to date but I didn’t think it was adequate for this new boat.
  20. Also - the trailer is pretty big, so it could be 5,000 lbs combined?
  21. Perfect - it's just bigger than any boat I had previously. I wanted to make sure I got something that got it out of the water no problems. It will be on a lift in my boathouse most of the time but will need something to get it in and out while I reconfigure the dock/lift I currently have.
  22. I need a truck to pull a boat (3,400 lbs + trailer), not often, so I don't want to spend a lot of money as it will not be used often. Any suggestions how to best search and locate such a vehicle? I've never had a truck so I'm not sure exactly what I'm looking for. Any help would be appreciated.
