One of the many problems was they didn't order/prepare enough food, particularly considering their sales expectations.
We live nearby and you'd show up at 2 pm on a weekend and everything was sold out, yet they're open until 10. No food and no sales yet (not) paying 8 staff to stand around.
A buddy and I stopped there the day after Thanksgiving on the way back from fishing on the Guad. Got there about 11:30 and they were "sold out" of everything except for pork ribs and fajita tacos. They're stated reason was because a huge to-go order was filled at 11:00.
I suspect they just didn't have any barbecue because there was no smoking done the day before. I watched them dump restaurant bins full of already cooked and sliced fajitas on the flat tops. In that case, they shouldn't have been open the day after T-giving or not open until dinner service and given themselves enough time to smoke some barbecue.

So I picked up this skit from another thread. After watching, it is quite clear that previous generations of SNL cast members were better and rehearsed much more than the recent casts. It drives me crazy when no one in a skit can give a line without reading it off cue cards. I get that some of the hosts are outside of their comfort zones, but the regulars should be able to learn their lines.

I use rice vinegar in my jalapeño slaw dressing when I don't want a strong vinegar taste. I don't mind the taste ACV, so I'll use that sometimes also.

I'm sure I watched that movie for the first time because the TV guide noted "brief nudity." I guessed a Jeopardy question correctly a couple weeks ago for the same reason - 1982 Nastassja Kinski film Cat People. A 12 year old boy remembers stuff.

Upthread I mentioned some calf stretches for Achilles's tendentious - same stretches should help reduce PF pain.

Only open for home games, in which there are 17 (plus a few other random matches). They were selling $12 brisket tacos, $12 pulled pork sandwiches, and 1/2 racks of ribs at like $28. While it quite a bit of revenue for 3-4 hours, it barely factors into the $4.5m stated yearly revenue.

Moving the business to a city of 16k and expecting to more than double revenue in the first year seems insane. Add the fact that expenses rose exponentially, and it makes zero sense. Poor management practices just made the implosion happen sooner.

I think Brittney Howard at an ACL TV taping next Monday.
A couple weeks ago, my wife was asking why we don't buy some tickets to a taping of ACL. I knew you could buy tickets, but wasn't sure exactly how to get tickets. I vaguely remember people waiting in line outside the ACL taping studio back when it was on the UT campus. Found out that you had to send in a request and then get drawn. First opportunity was Jelly Roll - I ain't trying to go to no Jelly Roll. Next up - Brittney Howard. Sent in my request and learned today that I was selected from more than 4200 entries.
Now we get to show up on Monday at 6:00 to try to get two passes and hopefully get in. We'll see.

Buda EDC offered several hundred thousand in incentives (I've seen $288-512k) for Valentina's to open in that big building. That sounds like a bunch of money until its not. I doubt Valentina's made all of the metrics to get all of the incentives. I wouldn't be surprised if Valentina's hired and staffed more employees than were required just to try to make the requirements.

While growing from a food truck to a brick and mortar can be a problem, adding the dinner service seems to be the biggest gamble. The increase in manpower necessary to go from "until sold out" to 2 meal services is exponential. Valentina's not only did that, but they also added a bar and increased the size 10x.
It will be interesting to see how LeRoy & Lewis does. Their model has always been based upon providing high quality, yet cheaper cuts of meat (beef cheeks and now chuck roasts and flat iron). Rotating the protein special should help as well. I think they'll be able to pull it off, but that full day service still might be a problem.
