The funnier thing is that was likely manufactured at a facility a few blocks from my office, off Burleson Rd here in Austin. Nothing like mingling with both fleshlight, tesla and TPWD employees while I’m trying to pick up a sandwich for lunch.

Cross posted from the shit you cooked lately thread. Leftover pork loin stuffed with boudin, some brown gravy, on toast. Heavy on the cracked black pepper. Needed a nap after lunch (yesterday). I also licked the plate clean afterwards, like a dog.

It's good, as always, but they changed their serving methods after Covid. You have to order at your table, off the menu now.

HEB had 7 or 8lb loins on sale. This was half of an 8lb’er. Butterfly, salt, roll up and let sit in the fridge dry brining for a couple hours. Then pulled it out and stuffed it. I’ve messed up a lot of meat but pork loins and tenderloins are pretty hard to screw up.

Yeah, it’s a hard nut to crack. I’m at an age where I don’t do risky stuff anymore, but convincing younger people to not touch anything that doesn’t come from Walgreens is a tall fucking order.

True, it’s not like it was when the worst thing we had to worry about was baby laxative or some benign stuff. Biggest problem now is even if you teach kids and they’re aware of the danger, once your inhibitions are impaired things happen. Bad things.

Boudin stuffed pork loin started. Reverse searing, going into the oven and then on a hot grill. That’s a pepper jack/havarti blend under the boudin.

If you are someone who loves driving, it is in your best interests to have well-designed public transit. It means there will be fewer cars on the road and you'll be stuck in less traffic, which saves you time. And, it means people like me can save money and be healthier by walking, biking, and taking public transit instead of driving. In fact, for trips that are <2 miles, biking is usually faster than driving for me here, making it kinetically favorable.
Right now, we are stuck in the high energy transition state between two energy minima, which is what results in these non-idealities. But if Austin commits to doing this right (and in a cost-effective way) I think it'll be very good for the city in the long run.
Have you biked or run, or walked or even gone outside in Austin in August, vs the Bay Area? If there’s a paying market for sous vide long pork then yeah, it might be good for the city. Otherwise it’s hell on EMS having to haul stinking carcasses off the sidewalk.
