  1. To make room in the refrigerator for shit that family and friends drop off? 12 hours, a day, maybe two. It never cooks past rare. That was the point of it being fool proof. No matter how long it has been in there, the consistency is the same. No real rhyme or reason. CHIEF
  2. My recipe is easy. Season the prime rib, throw it in a turkey bag and sous vide at 129 degrees for a few days. Pull it out, keep the fat drippings for your au jus. Cold smoke it for 2-3 hours. Completely fool proof. CHIEF
  3. This kid looks like a stud. I have been lukewarm on some of FCS/G5 guys, they shine in their prospective collegiate level of play, but what's going to happen when they step up couple of levels. He had 3.5 sacks against Kansas, alone. That is more than anyone on Texas defense had all year except Overshown (4) and Sorrell (5.5). Would love for him to be a J. Ossai starter kit. CHIEF

  5. That menu looks killer. Interior food, so bugs, squash blossoms, Huitlacoche, etc. Carpaccio de Lengua sounds like something I need to make. I use Toro's recipe for mini carpaccio at least once a month, here, at home. CHIEF
  6. I'm telling you, you are doing yourself a disservice if you don't hit up https://www.torokitchenandbar.com before the game. It's a two block walk to the Alamodome. It's Spanish, not Mexican. Jamon Iberico, morcilla, paella, pulpo de Ajillo, solomillo, mini carpaccio, great wine, hottest women I've ever seen in San Antonio, live flamenco music on Friday and Saturday nights. I go there, at least once, anytime I go to San Antonio. We have nothing remotely like it in the Ft. Worth area. Probably my favorite place to eat in Texas. CHIEF

  12. Hell, I think I've maybe even been their with Brisket and a mutual friend. I know we used to frequent the one at the corner in the strip mall on the SW corner of Anderson Mill and 183. It had that Aussie owner that ended up in some kind of trouble. CHIEF

  18. There is a Gibson's in Weatherford. Was the goto place for ammo a couple of years ago, until I found a guy on a county road a few miles from us that can get about anything, and is priced right. CHIEF
  19. I was the first to see him, he has been to some of the other hunter's feeders, but is on a "no kill" list. Since I was the first to see him, I get to be the one that shoots him. If someone is seeing him at their stand, I will hunt their stand to kill him. It's kinda set up that way through a mutual agreement. That way no one gets disappointed and no one else feels like a sheep killin' dog. Preserves friendships, which is what's most important. I get texts all day, CHIEF, your deer is at my feeder, I figured he ate $1.56 worth of corn, here is my Venmo info. All of these guys own their own business and are really successful, but act dirt poor. I picked up a carport from my wife's modular building company for $13.18 just to get it off their books. Told the group I expect their $1.32 when we get it here. One asked if he could pay it in installments. CHIEF
  20. Got back from the 8 day hunt in Benjamin. The rut is on, we saw a bunch of good bucks, all 10 hunters have, at least a 150" class deer coming to their area. The big ones won't go into the feeder pens unless the road corn gets eaten, and they absolutely have to. Here is our "Big Toad". We all looked at pictures and couldn't get him to 5.5 years, so he walks until next year: CHIEF

  22. It's funny, all the guys I hunt with are from Temple/Killeen/Belton/Salado, they drive 5-5 1/2 hours each week to hunt in Benjamin. CHIEF
  23. Was gonna leave tonight but CHIEF Jr. is still in a class giving a presentation. Also, my late father's sister passed, and visitation is tonight. We are leaving in the morning for the lease, in Benjamin, won't be coming back till Monday the 28th. CHIEF
