  1. Generally two. But after my daughter’s sophomore year of high school, she did their counselor-in-training program which is three weeks. It was a lot of work and she was exhausted when it was over, but she loved it.
  2. Both of my kids and my stepdaughter have attended Camp Champions outside of Marble Falls and love it. And my daughter was a counselor her last summer before going off to college. At this point in the year they may be full or close to full, but I highly recommend checking it out. https://campchampions.com/
  3. I assume you've been to Eugene. I've only recently become acquainted with it since my daughter started school at Oregon. It has a small town feel, and sort of what I imagine Austin 30-40 years ago--liberal, hip/weird, educated, and mostly white. It's a beautiful town, and while there are long periods of gray skies and rain, the rain is more of a tolerable mist than a steady downpour. And the summer/early fall months are gorgeous. Great if you're into outdoor activities. And the only big city around is Portland, which I've heard is a cheap train ride from Eugene. But I'm not a big fan of Portland. It would probably make my list, but the rainy season would bump it down. I think I'd need more sun throughout the year, and a decent metro area 1-2 hours away.

  6. In a way, all of us has an El Guapo to face. For some, shyness might be their El Guapo. For others, a lack of education might be their El Guapo. For us, El Guapo is a big, dangerous man who wants to kill us. But as sure as my name is Lucky Day, the people of Santa Poco can conquer their own personal El Guapo, who also happens to be the actual El Guapo!

  8. Agree on Ruby Slipper. It's still a quality brunch stop, and the Bloody Mary is a wonderful hair of the dog to start the day. I probably posted a picture of my brunch fare several pages back. Despite being a chain and the existence of several other solid brunch spots in town, there's always a decent line when it opens, so unless you get there early, expect a bit of a wait.

  15. I've been eating plain nonfat Greek yogurt for years, and more recently Skyr. Central Market jut put out its own brand of Skyr that you can find at HEB, and its nutrition profile is the same or better than most other plain Greek yogurts on the market. Some hate the taste of plain yogurt, but it only took a short while to get used to it. High protein content (about 17 grams), good probiotics, and low carbs/sugars.

I can see anchovies as a thing, because (as I may have mentioned several pages back) my Cajun friend in Breaux Bridge taught me to put soy sauce in gumbo to give it a nice but subtle unami kick. Anchovies might do the same thing if used judiciously. These days I'm also not so restrictive on my view of what you put in gumbo, as long as it has a solid roux base. When I first read on this thread the notion of putting potato salad on gumbo, I thought to myself, "what the ever-living fuck?" But once I tried it, I recognized its genius.
