  1. I just made some Buckboard Bacon out of an 11 pound, .88 per pound pork butt that I picked up at H‑E‑B. Filleted out the bone, then sliced it horizontally to create 2 pieces about 2 to 2.5 inches thick. Dry brined for 2 weeks with Morton’s Tender Quick and brown sugar. Then rinsed, dried, covered with coarse black pepper, and placed uncovered on a rack in the refrigerator for a day to develop the pellicle. Smoked for 3 hours on my ZGrill pellet grill smoke setting (160*) for 3 hours, bumped it to 180 for an hour, finished it at 225* to an internal temp of 145*. Let cool on a rack, then into the refrigerator for a couple of days before slicing and packaging. I did cut a few slices after smoking for a sample and fried them up crispy. It’s not fatty like bacon, much meatier. I like it a lot.
  2. I think that the point is - you bitch and moan, ad nauseam, about the same shit every year. Incompetent GMs, you have better ideas. Yet we end up in the LCS and/or World Series every year. Maybe let’s give these guys the benefit of the doubt on April 16, for Christ’s sake.
  3. Suck it, punk https://www.nytimes.com/2022/11/05/sports/baseball/houston-astros-world-series.html
  4. Yep, I’m sure you’ve got it all figured out. Let’s just hope the Russkies don’t read Surly. Otherwise, the offensive is dead on arrival. Edited to say, I was being a dick, you might be right. But I hope the people in charge use some imagination to create an offensive that can’t be stopped. Wherever that may take them.
  5. Absolutely 1980 Astros was my greatest disappointment. First time in the playoffs, they’d always been crummy since inception, and you have prime Nolan Ryan pitching in the 8th with a 5-2 lead, win and you go to the World Series. My young mind was blown with the possibility of the World Series right in front of us. And then it all fell apart. Complete and utter devastation for young Victor. Nothing comes close for me.
  6. Photo of Jules giving Dylan Disu his wallet back.
  7. Live look at the Manhattan dugout
  8. You need Polynesian ties to do that, don’t you know?
  9. That is Surly perfection. The absolute best video clip response possible. Bravo
  10. And Bob's your uncle.
  11. Cheers to you and hope they get y’all energized soon.
  12. Interesting that they still rely on reporting. Here in the Houston area, Centerpoint seems to know right away how many are down. We lose electricity, go to their website 5 minutes later, zoom in, and get a pretty accurate count of how many customers are without power in your area. Used to call, but could never get through. Then discovered their outage map and realized that they already knew.
  13. So, a big defensive lineman that destroys people, with a handful of minor offers, pops up out of nowhere two weeks before signing day. Never on anyone’s radar, then we offer.
  14. Bumping this because I’ve been over served and yesterday was the second anniversary of my sweet wife’s death. God, I miss her.
  15. Yeah, this whole white knight shtick doesn’t smell right to me. The OP doth protest too much, methinks.
  16. No, no, no. What you really want is his bacon recipe.
  17. Stripes, duh
  18. Lynching? Really? Get the fuck out of here with that bullshit. The motherfucker was menacing and robbing these people at gunpoint and got what he deserved. Justifiably by law. Of course, the shooter had no knowledge that THE ROBBER HAD PREVIOUSLY KILLED A SHOP OWNER 10 YEARS EARLIER DURING AN AGGRAVATED ROBBERY, but that fact only appears to amplify that the shooter’s instinct to eliminate the threat was correct. The DA declined to press charges and instead referred it to a Grand Jury. And you are right - he will most likely walk. As he should, in my opinion. It wasn’t murder, it was homicide. https://www.khou.com/article/news/crime/taqueria-shooter-questioned-released/285-20e66d3c-8568-42e5-ada2-826b60053220 HOUSTON — The Houston Police Department said homicide investigators questioned the customer who shot and killed a man who robbed a southwest Houston restaurant last week. On Monday, a day after an attorney claiming to represent the customer said his client was ready to talk, HPD said that the 46-year-old man was questioned by homicide detectives. He was not arrested or charged and his name was not released
  19. Announcer making excuses for aggy recruiting this year. Just so stupid.
  20. Well, I’ve always been partial to the duo of Gene Elston and Lowel Passe from my childhood memories, listening on a summer night back before every (any) games were on TV. Of course, there were no championships back then. But, yeah, I agree with you, Ford and Sparks are pretty good.
  21. How I imagine next season going - Jimbo as Buddy Ryan and Petrino as Kevin Gilbride
