    3-2-1 Ribs

    I've mixed a little sauce with peach jelly and some red pepper flakes or diced jalapenos. It's a cheap and easy pepper jelly glaze. It's okay, but I don't do it much these days.

    I'd recommend 2-1-1. 2 hours in the foil turned mine a bit mushy last time I went that long. I've also foil boated baby backs with good results.

    I felt the same way, and I still do for the most part. But a trip to Stiles Switch where they suggested just a little to compliment the ribs really made me see it as a very light handed alternative when the rub is 100% savory. I put a little sauce in the wrap, which is cut even further with ACV and water. Then back on the pit to firm up after I unwrap. No sauce for the rest of the cook. Then, when I serve (mine), just drizzle of sauce. I don't even put paprika in my rub these days. The nice mahogany color on those ribs above is all smoke.

    That sauce is so thin it could be in a squirt bottle. Seems similar to the dipping sauce at Louie Mueller. Honey or brown sugar would work. Just add a little at a time. I usually feel like I don't want sweet on ribs either. But just a little bit of a thin sauce on top that doesn't gloop things up works really well. I also don't use sugar in the rub. So mine are pretty savory and need a little balance to them, which that provides well. I haven't tried the Goldees method.

    A good sauce plus either ACV or water to thin it out. Franklin's "Vinegar Sauce" is thin as hell and would probably work. I have a pretty thin sauce that I've started using based on what I had at Stiles Switch, which blew me away. Any sweetness is well balanced with savory and heat.

  7. Yeah, I couldn't get through Insomnia. Of all the connected books, I'd say the most important one is Salem's Lot. Hearts in Atlantis is okay, but it's really just the first book that has any relevance and you'd be fine skipping it. I mean, the Stand is obviously important, but people should read that one just because. 11/22/63 is my favorite, but read IT first, then chase with 11/22/63. It's a great way to spend a few months. The audio books for each of these titles are exceptional.
  8. Not initially. The first one you get is the stuff of prison riots. You have to wait and get one of the fresh ones passed out by the roll wench.
  9. Used Tweed Fender Bassman. My son picked on up a few years ago for about $750.

  11. Keep digging, and I'm almost certain you'll find Herb Alpert and the Tijuana Brass's Whipped Cream. Pretty much everyone had that back in the day and it holds up.

Legislating from the bench is fine when your side wants it, I guess.
