  1. I wanted a griddle to use both indoor on the induction range and outdoor in the rectangular gas grill. Started looking at this Made-In carbon steel Of course, they didn't make it themselves, they advertised it as a "Swedish" manufacturer. Turns out its from Kockums (whose product are also resold by other companies) But I see 2 problems, 1-sides are too low so food and fat can fall out, 2-handles stick out too much and occupy wasted space vs cooking surface Ultimately found Swedish manufacturer Gourmetstal making these in steel. Similar heft and thermal mass to carbon steel and cast iron, though slower thermal conductivity but shouldnt be a problem for the use-case. These are shaped better to fit on my grill sideways so I can still use the grill surface. Discounted Cast Iron because they require more maintenance against rusting. Most of them also cast the handles in-plane and have basically no lip which is dumb for usability
  2. If you want the Gucci stuff buy some Binchotan charcoal from the internet. It's made of Japanese oak and burns cleaner, longer, and hotter. They use it in places like Izakayas. Remember, it's only Binchotan if it comes from the Wakayame region of Japan. Otherwise it's just sparkling Kingsford.

Growing up in New York with 2 brothers, he's never played the 2nd most sport in America?

  12. Kinda addicted watching this Outdoor Boyz channel. Despite the name, its basically just 1 wholesome (mormon?) guy going in weekend survival camping. The stuff he does starts to get formulaic but he has legit knowledge and its good passive background TV
