  1. Who am I to judge the knowledge of these giants of Cajunhood? But putting shrimp in your roux so far prior to adding in The Trinity and additional stock and veggies just seems wrong. Shrimp is one of the last things I ever add to a seafood gumbo. Who needs a bunch of over-cooked rubbery shit in their gumbo?

  5. Better said, Dallas retreads and chains in downtown/central. Del Frisco's Double Eagle, Bob's Steakhouse, The Capital Grille, Texas de Brazil, Eddie V's, Ruth's Chris, Silver Fox, etc. seem to be where lots of business meals happen. And that's usually what I'm doing when I'm in Fort Worth. I love the old standbys like Angelo's, Railyard, Joe T's, Cattlemen's Steakhouse, and The Original Mexican Eats downtown. Sounds like there are more places that I should explore. Thanks for the comment.
  6. That's a shame about Reata, it was great before they had to move to the Caravan of Dreams spot after the tornado. I really miss the puffy tacos at Caro's on Bluebonnet Circle. Also the CFS at Massey's on 8th Avenue. It seems like many of the nicer places in FW are simply Dallas retreads.

  11. Burnet Road just morphed into 1325. Pretty sure that Parmer didn't extend that far west. It was all just a bunch of dairy farms out that way until IBM built their plant in the mid 1960s (to build Selectric typewriters -- very high tech!). Gracywoods is named for the Gracy family that had a big dairy operation out that way. @Armybrat may have a better recollection than me -- he was driving cars and chasing tail when I was still riding on a yellow school bus!

  17. Good point. I'm sure that I'll do the highest deductible plan that I am allowed to! And don't forget the fact that there has been a shit ton of money paid into that plan by my employers (mostly me since I turned 40 or so and always ran my own shit) paid in to support this scheme.

  19. Thanks. That might have been a bit bit harsh on my part! I still have a hard time with having the government playing such a big role in basic healthcare. Do you really need to file an insurance claim for every oil change and tire rotation on your car?
