  2. I've had a Traeger for several years, after converting from an offset. I'm lazy, so sue me. It's a;lso incredibly convenient if I want to do a smoke'reverse sear. The statement that you can't get good smoke is incorrect; you just have to know how to use it properly. The newer versions (which I plan to go to within the year) generate even more smoke. Also, if you want to sear, the newer models get hotter. You can also get sear plates that work pretty well. Never used the combined smoker/oven method, and never will. Briskets come out like this:

  10. Stopped by Interstellar again yesterday (second time there). Was late in the day, so they were out of moist brisket; the lean was very good, as were the pork ribs and sausage. The smoked scalloped potatoes are really amazing, and the ranch style beans are also nice.

  12. It is heavy -- I agree. I don't have to worry about using it all day like you do.
  13. The Shun works perfectly. Also great for smoked prime rib
  14. I rarely use sauce and if I do it’s a small amount on the side. I tried the beet sauce because it was there.
  15. I have only been there on weekends. Food was very good. I will say I'm not a fan of the beet sauce.
  16. Been using Shun for several years. Love them. Bought a set (use every one) and added to it. Best part is they have a giant brisket/roast knife I bought that is like a small machete. Perfect for brisket
  17. Have not been to the BLT there, but went to The one at the Ritz in Aruba. I can confirm that the popovers are amazing. Oh — and the steaks were good

  22. There is a Black's and a Cooper's in New Braunfels, or you can swing up 35 to Hays Co
  23. Stopped in the other day before my flight. Very nice, with decent food and a nice bar. Plenty of seating. It was actually nicer than some Centurion lounges.
