  1. Agreed. That is a terrible idea. You will wind up with dry, tough brisket. Slicing 3-4 briskets on the 25th will not take much time. Freeze them whole,

  3. I am equal opportunity and like pretty much any gravy with CFS. If forced to choose, I would choose gravy spiked with jalapeño or green Chile.

  5. Or you can just take the short flight from Denver to Montrose... I was only half=kidding about going there. I recognize the distance, having taken a dozen trips there, as well as most of the resort towns in Co.

  8. Yeah, this is the place we ate. I think the name has changed slightly from when we were there, but this is the location and menu. Not exactly Fleming’s, but not bad. Think Salt Grass.
  9. Driven through there several times going to CO. Spent the night here once. It smells. A lot. We ate dinner at X10 Texas. Food was actually not too bad.

  12. My opinion means nothing on this issue, even though I like watching the Triple Crown races. On the other hand, I trust Bob Baffert’s opinion, which is that the Derby is typically a rough and tumble race because there are so many horses entered. He basically said this is part of the race and that there should not have been a DQ.

    Burgers

    Been going to RF Stonelake since it opened. Always good. Steaks and burgers cooked over wood are great, as are most of the dishes in general. As for the green chili pork v. Burger, it’s not a binary choice. For 2 people, Get the green chili pork as an app, followed by the burger. And feel free to add a side of the green chili Mac. By the way, the grilled ribeye is amazing.

Everything I had was good (mac and cheese excluded — not bad, just kind of bland). granted, it’s a low bar for BBQ on the 620 corridor, but even when considering there is no good bbq out here it still qualifies as good. Not trying to put it with the elite, but it will be a place for me to go out here if the quality keeps up.
  15. Interstellar BBQ: Stopped by today and picked up to go. Tried the moist brisket, beef rib (seems to be a Saturday special), pork ribs and pulled pork (sausage had started late and wasn’t quite ready). Sides were beans (ranch-style beans, which are free), smoked scalloped potatoes and Mac and cheese. All of the meats were good — brisket and beef rib were smokey and tender with a nice peppery rub. Pork ribs had a really goos spicy/sweet rub. Pulled pork was tender. The brisket is prime, and the pulled pork is Duroc. The ranch style beans were a nice change from the usual pinto beans you normally get. Smoked scalloped potatoes tasted, well, smokey. Mac and cheese was fine but nothing special. Will go back.
  16. Flew in and out of Rome FCO this week. FCO is a cluster***, and Alitalia fits right in with that motif.

  18. This. Our last couple of meals there have not inspired me to want to go back.
  19. Took me a long time to figure this out, and have great results since, Same with cooking pork butt —. I started cooking it longer after I “thought” it was done and finally got the better bark and very tender, easily-pulled pork.
