  1. I like Nashville, and go there for work 3-4 times a year (was there last weekend). It’s more like Austin a few years ago, not the 80s (having lived in Austin in the 80s and again since 2000)

  4. I do buy wine, and not inexpensive wine, off the list often because I don’t have a choice in Texas. I don’t have an issue with a restaurant making money by making up the bottles. As the poster above notes, if the business model is to gouge by doing a 3 to 3.5x markup, which is the steakhouse standard, that’s a business model I won’t support. I’m nit interested in paying $450 for a $150 bottle of wine. The wine culture is so different in other states, especially California. You make sure the wine isn’t on their list, make sure it is a nice wine, and they open it without acting like you are doing anything wrong. I’ve also done this recently in a few other states. Pro tip: assuming you’ve brought something really nice, give a taste to the somm or waiter and talk about the wine.

  9. That’s a good choice. Like others, I like Roaring Fork, but it’s pretty basic. Fixe has some interesting, yet recognizable, upscale Southern cuisine, and good steaks if they want one. Wine list is much better than RF if they want wine. Get the biscuits to start, and maybe some pimento cheese.
  10. Fixe. And yes, they take reservations. Great part is they can get a steak if they want, or pork, or fried chicken, etc. Roaring Fork is fine. North location is better IMO If you want a true steakhouse, they are all pretty much fine -- Capital Grill, Fleming's, Perry's, Bob's, III Forks. Lonesome Dove is good as well, and they can go straight steak or fish, or get game

  16. I wouldn't waste Coravin gas (which is expensive) on a Meomi Pinot. To OP --no offense, I'm just not a Pinot drinker. I will say that Meomi = former Wagner wine = sugary. For starting out, try some different varietals or blends and see what you like. If you don't want to jump headlong into Napa cabs, go to Costco and get a couple of Bordeaux reds (which are blends and will be softer than most Napa cabs) and work your way up from there.
