  3. You need to have lunch at Addendum Bottega is good, but Brasswood in St. Helena is better for Italian
  4. I have used Park and Zoom since they opened. I use the valet parking, which is slightly more, but you get a bus picking you up immediately and taking you to the terminal, and you get dropped off first, with your car running, on return. Especially good on a late return

  6. I'm not suggesting reheating it on a Traeger. I am saying sous vide it and pop it on for 30 minutes. What has happened to reading comprehension? By the way, I will be the first to admit I am wrong about a lot of things. I am simply relaying my experience. And by the way, if that method doesn't work why would you keep doing it and expecting different results? ... oh, wait
  7. I did about 30 minutes and it was fine. And Champ has his opinions, but I doubt he has re-heated a cryovac brisket in a Traeger,. So while I will admit he knows a lot more than me about BBQ, I do know something about manipulating a brisket on a Traeger, which was what was asked. Oh, and he's needlessly snarky about it as well.
  8. I have a Traeger, and have done the Franklin vacuum-pack. Take out of refrigeration for about an hour. I did a redneck sous vide to get it up to temp (took a couple of hours before I tested the temp). then remove from bag and throw it on the Traeger (I use a standard 225 setting) and firm up the bark — monitor the internal temp to make sure it’s not going to dry out. Don’t leave it on too long. I’ve done this 3 times with good results.
  9. Go to the Hattie B's location on Charlotte Pike -- generally less crowded (and newer). The "Hot" level is just right for me. Above that gets iffy unless you have a very strong stomach, and I like hot food. Nashville hotel prices are stupid, just FYI. Makes Austin look cheap.
  10. That’s a tough price point for a good Napa cab. Here are a couple of suggestions though right at $30: Hess Allomi and Obsidian Ridge (this one is Lake County, so just north of Napa County, but pretty good for that price). You can get both of these at Total Wine.
  11. By the way, the current reviews on Hudson's Hill Country don't look promising. Went there a couple of times after they opened (after the other version failed) and it was OK, not great.
  12. Food there was awful. Went there on a Monday, and got a cold, overcooked steak and osso buco that had been cooked the day before, refrigerated and reheated. How do I know this? Because it was cold, I mean ice cold, at and near the bone. Yes --- they re-branded. The new sign is out front -- they are using the same "Texas Street Grill" name as the outdoor spot. It is open now, but have not tried it, and won't until I start hearing more about it
  13. Agree on the dessert room. Also, ask your waiter for the tour -- they will take you through the kitchen and also show you the on-site wine cellar (about 30,000 bottles -- the "big" cellar is next door, and has over 500,000 bottles)

  15. Chi Town has been around for several years. They had a small building between Hudson Bend and Lakeway that burned down a while back. I have not been to the trailer. I assume they still have the Chicago beef sandwich. If so, get it, with a dip (they dunk it in jus).
  16. Yeah -- I've wondered about that. Waco is the place to speed through on the way to Dallas so I can get to West and stop for kolaches (klobasniky, whatever). That said, as I posted a few days ago, stopped a Miller's in Belton last Friday. BBQ was good, and the place was very busy. You'd think a place could make it in Waco if one can in Belton

  19. The worst fire damage was in Sonoma county — esp. Santa Rosa. Napa had some fire damage from the 2017 fires, but it was contained to specific areas. Very few wineries were directly affected (damage-wise) in Napa. Main issue in Napa has been perceived (and in some cases actual) smoke taint to some of the later-harvested cab grapes.

  21. You are correct. Was not thinking about magnet schools.
  22. That chart is a little deceiving. Best High Schools according to US News (and some other rankings) are, in order, Westlake, Westwood, Vandegrift, then a drop to Lake Travis. So Leander is fine if you live in the area that feeds to Vandegrift (and there are some other decent high schools) and Round Rock if you feed to Westwood.
