  9. Well, they fought against the name change and lost, but your point is correct and the historical analogy is delicious. Also, I should correct my statement above that the School Board president is Latino. Licea defeated the previous school board president, who had been on the board for the past ten years in a contested election. Another board member, the only one who voted against the name change originally, was defeated in a contested election as well. She had been on the board for eleven years.
  10. Did Tyler change the name of its high schools back? I'm pretty sure it didn't since my younger son is a junior at Legacy. I think I might have heard something? I mean, when I started this thread about Tyler actually doing something good for once, how was I to predict that Midland's problems would be dumped into the thread and people would just assume the two towns were acting in concert given their proximity (that's a joke). It's okay. There's plenty to hate about the racist assholes in Tyler. There are plenty. But my guess is that the school board and its newly-elected, Latino president, want to not go through that again in reverse. I hope I'm right.

  14. The real question, which I pondered on Monday. Does @troph's pet insurance cover the intentional (on the dog's part) ingestion of spare ribs where said dog has no history of counter retrieval of food stuffs? Did I, the owner in this hypothetical insurance claim, create such an attractive nuisance, that coverage unquestionably should be denied? Let's assume I'm not trying to commit pet-insurance fraud by collecting under troph's policy, but rather, that I had a policy from the same company, which I assume is called, "It's Ruff" or "Bark Avenue" or some such. For your consideration:
  15. Yes, but not with bones or so I read much later. At the time, I thought I'd gotten her away from everything soon enough, and it appears as though I did. Only later, after no appetite the next day, followed by the shits and two pukes Monday morning did I decide it was time to go get checked out. Other than these symptoms, she wasn't in any distress that I figured required immediate attention, particularly due to her 50+ lbs size. While she was at the vet, Archie proceeded to enshitify the kitchen, which prompted my wife to get a second helping of expensive anti-nau$ea drug$ and probiotic pa$te for him. He probably ate a mole or something. Oh well. The ribs were good.

Archie ate a pan of brownies recently and both big dogs got a dose of Hydrogen Peroxide soon after, after which, we had to follow them around to keep them from reingesting the chocolate, foamy puke. He also ate a crap ton of craisins once, but apparently, those are not harmful. He's always the rascal you have to watch out for, which lets me know these ribs were as good as I'd proclaimed them to be.
  17. The worry if they don't become lodged is, because they are soft and brittle, that they cause a perforation, which would require immediate surgery. Both of these dogs are a bit over 50 lbs, although Archie looks much bigger, but he's really just a lanky floof and looses most head to head take-downs with his six-year-old sister. Anyway, they're both going to be happy to get off the bland diet tomorrow morning.

  19. Cheapest shipping puts it at $18 before tax for 1 lb of cheese.. 3--5 day shipping would put it at $22 before tax. Again, this is an "I forgot to plan ahead and don't even want to spend $11 on cheese before considering having it shipped bit of advice. I can cut up a block of Tillamook in short order and toss it in the fridge without too much trouble. That said, I've used the LEM casings before and was happy, but I got them off of Amazon with shipping not being a factor. Edit: Looks like I can order high-temp cheese for $14 per pound from Amazon before tax (free shipping). My inner cheapskate is definitely doing the 3-day method still.
  20. Well, Maeby did something I've never seen her do. She popped her front paws on the counter and tried to go ham on some pork spare ribs I'd just cut. Archie, who ordinarily would be totally game for such shenanigans sat idly by while she misbehaved. After a day of no appetite and some mudbutt/vomiting on her part, I took her to the vet to make sure she hadn't swallowed a bone. Meanwhile, Archie developed sympathetic diarrhea and the vet sent home some anti nausea meds for him as well. Thankfully, nothing on the x-ray but gas. $1k later (for x-rays, blood work, IV, observation, and meds, I hope the ribs were worth it sweet girl.
  21. Sausage making tip of the day: If you don't want to pay $20 per pound for high-temp cheese, you can dice up a block of store bought cheddar into 1/4" or smaller cubes and put it in the refrigerator uncovered for 2--3 days. It dries out and doesn't melt as readily.
  22. I'm new at this, but based on that video posted above, by cold smoking initially you're aiming more smoke (and color) without rendering the fat. Once the fat is renders, it can form a barrier between the meat and the casing, making for a chewier, less snappy sausage. It seems like a lot of people will go ahead and cook them off (after shocking them in a cold water bath) to 150 or so after the cold smoke before vac-sealing them, but it's just a matter of preference if they've been cured.
