    Ah, yes. The "status pan (at 2:17 mark). That's the one. It's an absolutely fantastic pan. Totally nonstick when seasoned, heats up quickly, and releases that heat fast so you can do those 30 second omelets. My carbon steel omelet pans work well, but it's not a 30 second affair. Julia really liked Vollrath for omelet pans. Before I got the dedicated omelet pans, I used a Matfer-Bourgeat 10.25" carbon steel pan. I still use it as a part time egg pan for scrambles. Also, the water addition is so clutch to a good French omelet. Really gives it some body.
  2. I lost my first Golden to cancer at age 7 in 2001 and didn't have another dog for 12 years. I regret that, but I know how it hurts. I don't doubt the 300% your best dog ever. I miss every dog we have had and just love up the three we have now. I wish they were forever.

    So what's everyone doing for omelet pans? My mom passed down to me, my sister, and my niece, each a cast aluminum "Julia-Child-type omelet pan (Pot Shop of Boston still manufactures them. They are absolutely fantastic. But alas, I now have induction and mine has become a decorative conversation piece. Last year, I picked up two DeBuyer omelet pans: the 9" and 11" models. They have been really great. I don't see a lot of other dedicated omelet pans, other than nonstick, and I'm happy with what I have, but I'm curious what others are using. Or are you all just boiling your eggs in a way that is foreign to me?
  4. I'd definitely email Lodge. It has a limited, lifetime warranty. My eight year old Lodge developed a chip. I did provide a receipt, but other than that, all they asked for was a couple of pictures of the chip and a personal assurance that I had not misused it (they have a list for you to check off. They sent me a brand new Dutch Oven without further delay. Worth a shot. Their customer service is top notch. I've got a small chip on the outside of the replacement. But that's on me because I didn't get the pot holder in the right spot on the lid and burned myself while dropping it from a height of about 3.5 feet. Amazing it didn't get damaged worse than that. I've learned to live with it.
  5. Brand of Dutch oven? As long as you didn't do anything that obviously caused the problem (like drop it), you probably can get it replaced under warranty.

  8. When my wife went through breast cancer, I will never forget when the surgeon came out and told me the lymph nodes were clear. I had been pretty rock steady throughout neoadjuvant chemotherapy and all that entails as a supportive spouse, but when I got that news, I felt like I needed to be mopped off the floor. Because that really is the big question. Just a bit of advice, as part of the reconstruction process, she'll have drains. They tell you in the hospital to keep them clean, etc. But in the US, at least 10 years ago, they tend to leave the drains in for a while (and you get sent home with them). What they should tell you is you need to keep a sterile field around those things at all times. Reconstruction was a lengthy process with multiple infections, but we eventually got it done. Working in your favor is that she didn't opt for immediate reconstruction, i.e., spacers immediately following the mastectomy, and she hadn't undergone chemo prior to surgery, which means her immune system is in much better shape than my wife's was. But don't sleep on those drains. You cannot have enough rubbing alcohol in residence based on our experience. Stock up. And all the best to you guys.

    My method always has been to put the egg in cold water, bring it to a boil, turn off the heat, cover, and let it sit for 15 minutes. Put it in ice water for a minute or so and peel under running water. Just the way I learned.

    I was responding to a Reddit post about Diana and why Don decides to try to find her, and ended up finally putting some thoughts down about the last few episodes. I could be completely off base, but I've been meaning to write it down for a while. This is an extension of my previous post about how the last couple of episodes lay out Don's relationship to various women on the show, how his relationship with them and their resulting perception of him unfolds as some sort of quest to discover his identity ("Who is Don Draper?"), and how it plays into the last two scenes of the finale: The last few episodes have a few vignettes in which we see several of Don's relationships with women wherein he seeks a connection (he wants to feel needed) and is rebuffed. It happens with Diana's estranged husband---Diana* in absentia), Sally, Betty, and Stephanie (lover, father, former ex-husband, and whatever (Stephanie doesn't know either). It probably happened earlier with Megan (Don as financial provider). Finally, he gets to Peggy. He's hit an emotional rock-bottom. But she doesn't rebuff him. He lays himself bare to her and she tells him it isn't true (even though we know it is), he is needed ,and that he should "come home." Anyway, Peggy's acceptance** of Don seems to give him a sense of ultimate identity (his professional identity), and that leads into the group session where Leonard talks about being the item in the refrigerator which just wants to be chosen. Leonard describes himself as a commodity and this allows Don to connect with him---he's an ad man after all--- at which point, Don is able to experience empathy toward Leonard, which experience forms the seed of the Coke Commercial with people as the product who just want to be needed. *Diana is a stand-in for all of the lovers to some degree. But she resembled Rachel and Don first encounters her after he finds out Rachel died, which was the initial attraction, and her husband says something to Don about her that is an indictment of Don's character (I can't recall precisely). But whatever he says, fits the string of Don's being rebuffed by the women in his life. **"What do women want? A chance to get closer." Peggy has managed to get closer to Don than just about anyone on the show (save for Anna) and, obviously, she doesn't know everything about his failings in his personal life, she, as a reflection of him throughout the show, is close enough to him to answer the Who is Don Draper? question.

  19. I had clam chowder at Thundercloud back in the 90s. Honestly, not awful, and I didn't die.
  20. Cammoo, which I belive may be Chinese for "never heard of it." But it was well reviewed and a bit cheaper a few months back from its current $299 price tag. It's also really robust. They have lots of different models/sizes/configurations and Cambro-style transport warmers. My first experience involved a lot of food. So I was playing with the dial to keep things around 150F. In other words, the random numbers on the dial didn't line up precisely with the thermostat (apparently near the middle rack). I may have to use a remote-probe thermometer to dial it in, but for what I was doing on Thanksgiving, a 10 degree differential wasn't a big deal. If I'm holding a brisket or some such, I'll probably employ some extra technology to keep an eye on things. But I also didn't have any water in the pan, which probably helps serve as a heat sink.   23. After Thanksgiving weekend concluded, I realized we were out of some "legit kitchen accessories." So today, I ordered 24 32-oz. Deli Containers with lids, a masking tape dispenser, and 3 rolls of green masking tape to label leftovers. The lids fit all sizes, and they stack so well. Our Tupperware-type stuff is wearing out and disappearing and probably won't reappear and finding a matching lid always was a pain.
