  4. Tending the fire is a pain. However, for me at least, I cannot get the same flavor or bark from charcoal and wood chunks that I get from logs. That alone makes it worth the extra babysitting. Plus it gives me an excuse to drink. A lot.
  5. If you are referring to my ets, I love it. It has two tuning plates that you move to get it even across the smoker or set one section up to run hotter. Helps when doing multiple types of meat. Only draw back is the fire box is a bit small for my liking. Seems like it goes through more wood and needs more tending than other larger pits. Maybe it's just me though. Have to tend it every 45 min-1 hr or the fire will go quick. The quality is second to none and hard to beat for the price.

  7. I searched but did not see anything. US Food just opened in Dallas off of Alpha west of the Toll Road. If you have been looking for an alternative to Restaurant SUpply for large cuts of meat like beef spare ribs or prime steak roasts and brisket, they have it. Also tons of supplies. Prices on meat weren't the best.   13. That is how most schools are set up. I have been teaching for over 10 years and have never been in a school that is accessible from any point but the front. Most schools will have a front door that is unlocked and feeds only into the office. The office will then unlock the door to let them in once they have checked in.
  14. First, there is absolutely zero reason for civilians to own any kind of assault rifle. Second, no handgun needs 30+ round clips. Take those two away and you would be on a good start. I am an avid shooter and gun owner, but there is just no reason to have that kind of firepower available to the public. I understand that you cannot take the guns away from everyone. A bad guy is not going to care about gun laws and you would be taking the weapons from the good guys only. We need to look more into arming the personnel at the schools. The best police response time is not good enough when it only takes seconds. Schools need to look at how the setup of their front allows for access. Maybe deactivate the fire alarm pulls that are in the foyer area that anyone has access to. Just a few thoughts
  15. Interesting. I've seen that place but haven't been by yet. I'll have to check it out. Also, I'm surprised Hutchins doesn't get more love from the Dallas bbq scene. Hutchins about on par with Rudy's for me. I just don't understand the love. Been going to it since they had the one on the corner of main and Preston in Frisco back in the early 90s. Never thought it was anything special.
  16. As far as gaskets go, they are fairly easy to replace. Although I do no several people that go without gaskets and don't seem to have many problems. My favorite accessory for my Big Joe is a flame boss. The wifi is simple to set up and the new ones can monitor 3 meats as well as pit temp. Plus you can change the temp or alarms from an app on your phone from anywhere at any time. Makes it a set it and forget it smoker. Stays within 5 degrees of set temp as long as it has fuel to burn. The app also keeps records of all your cooks and you can edit notes to keep track of your cooks and reference back to them.
