  1. Just threw these in the smoker. That sucker has been doing some heavy lifting for me this weekend.
  2. This was fun. Took my time and did this as a 3 day process. Very worth the wait, but happy I have enough that I probably have enough to last me the year, depending on how much i give away.
  3. This ended up being ridiculously good. I did a cold smoke for 6 hours at 150, and cranked the heat up to test one linkk which was insane… there was so much snap that i literally got juice in my eye after taking the first bite. After vacuum sealing a few batches for friends I still have about 20 links I threw in my freezer.
  4. I made an obscene amount of sausage to smoke tomorrow. It was my first time making sausage, and after popping the casing a few times at first, I finally got in a groove and the process got a lot faster. Made a basic pork sausage using one of the Chud’s bbq videos. I’m glad I have enough to not have to do this again for a while.

  8. Keller’s bakery is better, IMO. Obviously Olde Tyme is great, and easily my favorite po’boy regardless of location. Pop’s Po’boy downtown is also good, and they put a more modern twist on their many combinations. Don’s Seafood is pretty good for fried Cajun stuff, Dwight’s for crawfish. Judice Inn is an institution for burgers.. the burgers are small and they don’t serve fries but grab a couple of them and you’ll be a happy camper. For Mediterranean, Zeus on Johnston doesn’t look like much but we will get it for lunch just about every time we visit the in-laws. As far as nicer places, Charlie G’s and Social are both very good, and Cafe Vermillionville may be the nicest restaurant in town. We had our wedding reception there so I’m especially fond of it. I’ve got more but this should cover most of your bases.
  9. I bought a new 2022 Canyon Denali last summer and I love it. I’ve always driven larger SUVs (sold my wife’s hatchback and gave her the Pathfinder for trips and room for kids, etc), but even though this vehicle is smaller than what I’m used to, I don’t know that I’d even want an F150 or sierra 1500 right now. I work downtown in Houston so dealing with traffic is super easy, it fits in my garage, gas mileage isn’t bad, and I have more utility with the bed than I did with the SUVs. I wouldn’t mind a little more comfort in the back seats, but I only plan to haul my kids back there anyway. Anytime we need room for adults we’re taking the pathfinder.

    Help!

    I’m looking for a place to throw a 60th birthday party for my MIL. Ideally, looking for 20-30 people and being able to maybe reserve a room or something to have cocktails and appetizers passed around or ordered and set down or whatever. Looking for something in the middle of being not too formal but also not super casual. Has anyone done something like this before and have some guidance?

    Hmm, strange. I’ve had it multiple times, once even with it sitting out for a while during a kids birthday party. Even after sitting a while it was still surprisingly good. Maybe it was a location thing. Only good experiences with the one in the heights.
  12. My wife and I are basically high school sweethearts; I’ve had every king cake in that town over the last 15 or so years… Keller’s stands out as the best of the best even over some of the New Orleans king cakes a friend of mine sends every year.
  13. That’s what I figured. And don’t get me wrong, I love Meche’s, but it’s essentially a giant donut cake. If you’ve never had Keller’s in Lafayette I’d suggest you change that (they ship too, it’s just expensive AF) It would be nice to throw a Mardi Gras party with some local king cake to save some money but also not be Kroger or heb variety shit.
  14. Are you referring to Meche’s in Lafayette? We have some friends that love Meche’s (I don’t mind it at all and will never turn down a king cake From there) but the best king cake in Lafayette is from Keller’s, and they charge a premium to ship. I really hope you’re talking about a Meche’s in Houston

    No idea. I had some at my cousin’s kids’ birthday party and thought it was great, especially for having like 10 pizzas delivered, then had 3 delivered to my house during another event. If it’s that good after delivery I can only imagine how good it is fresh. Haven’t stepped foot in one of their stores yet though… but I’d they did by the slice I’d be all over it

    Is there anywhere in this city worth getting a King Cake from? We usually have my in-laws bring us one from Lafayette but if there’s anywhere here that makes a good one that would be great news.

  22. I really wanted - no, needed - tacos this morning after church. Velvet taco wasn’t open yet and the marathon bullshit kept me from getting to the Torchys on San Felipe, so we hoofed it over to the one of Gessner. Maybe it’s just that location, as I haven’t been to torchys in a good while, but holy shit they had actual good tortillas. Flour and corn were all handmade and not their usual Mission brand bullshit. Is this a new development across the board or is this location getting their tortillas from the HEB across the street?
