I had something typed in the editor but it's probably too much. I just want to say that I've never had a television series make me actually fucking cry for no reason more than Ted Lasso. I'm weak in this area and it's my mom's fault. Hell I hold everything else inside, no idea why Bloodsport make me shed tears but it does. Ted Lasso speaks to my soul. Fantastic show. Well done to Jason Sudekis and whoever else dreamt this thing up.

Searched, can't believe there's not a thread. I watched the first two episodes last night. I liked it. It is a sitcom based roughly on SS's childhood upbringing in San Antonio raised by his mother and 5 or 6 uncles. It's pretty funny and entertaining. Thanks for the thoughts. It is not reverse flow. There is exposure to the firebox underneath the lower grate adjacent to the firebox but it has an adjustable 1/2" thick damper that slides and I keep it shut unless I'm trying to blast something. There is a fixed 12" plate in the middle and another 12" plate damper that can either slide underneath the middle one if you want to keep direct access to the firebox open, or closed. I can post a pic tomorrow.

This is something I was going to post about. Again I don't cook nearly as often as I used to. I have definitely noticed when I cook brisket on my offset or even on my primo (cap down, always. Cap up was a disaster) that the very bottom layer burns, regardless of temp. I set them up cap down, point towards the firebox, damper fully closed. I have been keeping temps low lately to control things. I don't think I ever got above 230 in the middle where I measure temps. All of them wind up with a crust so pronounced that it either sticks to the grates, foil/butcher paper, or I discover when carving that I can't cut all the way through and have to carve off the bottom layer as I get towards the point end. I'm wondering if maybe I should ice the cap side before putting them on. I can understand this being an issue when I used to cook at 325 but I don't do that anymore.

HFS y'all this is the life hack I've been missing. This is it. Hell I think even pouring the juice back on top from the foil boat makes a significant difference but it never occurred to me to try it. Amazing results.

Bruh I got on 108 lbs of brisket, 50 lbs of pork shoulder and 5 racks of spares, I ain't got no room for a lidded pot! Got that stuff bagged and tagged in the fridge hopefully gelling up. I thought I might try the same with my rib trimmings but that didn't go so well, even at very low temps the drippings burn up.

This thread sent me down a rabbit hole and I might as well share what I've learned. I do think it's highly personable based on anatomy of your ear and such. I first bought the Sony buds. Highly rated for sound and as I said upthread I have the equivalent over-ear and they are amazing and extremely comfortable. Sony WF-1000XM4 Industry Leading Noise Canceling Truly Wireless Earbud Headphones with Alexa Built-in, Black https://a.co/d/2jVB7XX These sounded really good to me but were bulky and not comfortable. Tried different tips and they still hurt my ears after an hour or so. Also once I bought the other two pair and compared sound, these were the worst of the 3 sound-wise imo. Next up I bought the Jabra Elite 7 Pros. I looked at the Jabra Elite 75t but these were rated better and there is actually a newer version of those, the 85t, and the 7 Pros were rated better than even those and supposed to be more comfortable. Verdict is more comfortable than the Sony buds by a lot. The sound was better but the bass was punchy. I don't know what the fuck I'm talking about but calling it punchy sounds like something someone who knows things would say. The stay in ear factor was worst of the 3 no matter what tips I tried, and I have a lot of different sized and types of tips. Jabra Elite 7 Pro in Ear Bluetooth Earbuds - Adjustable Active Noise Cancellation True Wireless Buds in a Compact Design MultiSensor Voice Technology for Clear Calls - Titanium Black https://a.co/d/5Q6YSOK The final pair and clear winner to me were the Beats Fit Pros. Again I'm coming from some Powerboats Pros and these had a lot of the features I liked about the Powerbeats but large improvement in sound quality, form factor (oops I did it again) and fit. The bass was booming on these. Like it literally vibrates in your ear on the really deep notes. Impressive. They have a little wing that goes into your ear canal to help keep them in plant yet they are quite a bit smaller than the above two pair. The biggest downside is probably that the case is bulky compared to the other two. It's still less then half the size of the Powerbeats case. The "large" tips it came with fit pretty well and were comfortable but playing around with the alternate tips I had I was able to find a set that i liked a little better. Maybe the best thing about these is they have a clickable button on the right bud that actually works and makes sense. It's nice to be able to feel that you're physically pressing a button to pause/whatever and double press to advance to next song. The other buds I tried had sensors that were hit and miss. Thanks guys. Ha, I don't even have a working vent. My kitchen is getting torn apart for a complete remodel in ~ 2 weeks. Guess we will have to live with the stench. Large meats are on, hoping to change out the fuel basket on the offset in an hour or so and get 4-5 hours.

I trimmed these guys up pretty good but I had a metric ton of fat. A full stock pot full plus a 14" cast iron skillet. I have lids on both and have the burners set to 3. How long am I doing this? Do these large trimmings break all the way down or is it going to look more like grandma's dried up lady parts with some liquid under.

@dcbc I haven't cooked brisket since last year's school fair. I'm putting ~ 100 lbs on tonight. What's the latest? Render the trimmings and pour over flat before wrapping after room temp rest I gather?

What you realized is pretty good advice. I have more money than patience but not a lot of either and though these things sound amazing they are not suited for my alien ear canals. I've tried 5 different tips including two that came with and 3 others I bought to find a better fit and they still aren't exactly comfortable. At all. Not to mention they have disconnected a couple of different times watching TV for no reason at all. I think I will send these back. Anxiously waiting for the 1000XM5s to see what they are all about.

These are pretty badass @ztejas. They seem to stay in place. Loud, anc on point for buds, deep rich bass. Popped my powerbeat pros in to compare, there is no comparison.

Just bought these to replace my 3 year old powerbeat pros. I'll let you know if I like them, the reviews were really good and I have the Sony over ear cans and they are awesome. https://www.amazon.com/dp/B094C4VDJZ?psc=1&ref=ppx_yo2ov_dt_b_product_details I loved the Powerbeat Pros with the ear hook but they don't fit in my ear very well anymore and I can barely hear sometimes over the shit they are blasting on the speakers at the gym. These are apparently a lot louder, have anc and fit in your ear better blocking out ambient noise.

My latest shitbrick installment. I have posted before about how the battery powered portable bidets work for me for travel. Not as good as the real deal but enough in combo with tp or wipes to alleviate a good deal of my travel shitting anxiety. That was all well and good for my vacation travels. I have not had to travel for work since Covid until this week. The logistics of having to leave your hotel room at 7 AM, be onsite with a client for 8+ hours, then spend 5+ hours in an airport/plane are not copacetic to my ideal pooping conditions with my travel bidet. I'm not regular enough to be able to completely empty my bladder on command before I pack up for a long day. This might be an every day struggle for some less fortunate but I have been working from home since 2009 and I have no desire or intention of ever going back to an office every day. Anyway I did what I could in the morning and felt it building through various gastro waves during the client onsite. The bathroom was adjacent to the conference room in an art/deco type of studio office with exposed ceilings, and I was basically the main presenter for the day, so that was not happening. We were slated to wrap up at 4:30 as my coworker had a 6:30 flight. My flight wasn't until 8:30. I figured I could go to the AmEx lounge in the airport and chill for a few hours, find a decent shitter, maybe even bring a bottled water into the stall with me and use my travel bidet. No luck. I did not realize I had to be flying Delta to get into the Centurion lounge. I was now resigned to holding it until I got home at midnight, so long as I could find a decent place to chill for 3 hours. I couldn't. CLT is insane. Not a quiet corner or a seat in the entire place. I finally found a seat at a high top in the food court and I started to re evaluate my life's choices. I am going to sit here for 3 hours? No, fuck that. I found the nearest, nicest hotel. I ordered a Premium Lyft. I had them drop me at the conference wing of the hotel. I found a giant, pristine, handicapped bathroom stall with a floor to ceiling door in an empty bathroom. I filled up my pocket bidet and brought it in with me. I saw Blue and he looked glorious. Fantastic experience. I even got to change into my jeans and take an edible. I spent the next 2 hours sitting in a comfortable chair in the lobby charging my phone. Best $50 I've ever spent. If you ever need to poop in Charlotte I highly recommend the Airport Sheraton. Next time I travel for work I just won't eat I guess.
