A good service error/ace ratio in volleyball is 

1:1 or better, meaning you have at least as many aces as errors. While aggressive serving can lead to more errors, the goal at the advanced level is to be aggressive while still achieving a 1:1 ratio or higher, with some experts suggesting a ratio of 0.67:1 as a minimum threshold.

Percentage of points won on serve is the better metric then just looking at aces and errors.  You have to serve tough enough to get the opponent out of system.
